Street Style Egg Rice is an awesome dish that will definitely tickle your taste buds. When leftover rice is available, and you are in no mood to cook something new, then decide this street side egg rice.
This Street style egg rice is unique and special with leftover rice blended with scrambled eggs and favorite veggie. This dish not taste anything like the Chinese fried rice. It has an Indian masala paste that’s made from scratch and added to the rice.
This easy egg rice is perfect for special occasions like kids birthday parties, family get togethers, lunch box, etc. It takes only 30 minutes to prepare. INGREDIENTS
To Cook Rice
- 1.5 cup basmati rice
- salt – to taste
- water – as needed
To Grind
- 3 cloves
- 1 inch cinnamon stick
- 1 star anise
- 1 marathi moggu
- 1 tsp fennel seeds
- 5 garlic
- 1 inch ginger
- 3 green chilli
- handful of mint leaves
- handful of coriander leaves
- 2- 3 tbsp water
For Scrambled Eggs
- 4 eggs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp sesame oil
For Egg Rice
- 2 tbsp sesame oil
- 1 large onion – finely chopped
- 2 green chilli
- 1/2 tsp red chilli powder – i used spicy variety
- 1.5 cup cabbage – finely chopped
- salt – to taste
- 1/2 tsp sugar
- 2 tsp soy sauce
- 2 tbsp coriander leaves – chopped

PROCEDURE
- rinse the rice in water for 2-3 times and then soak the rice in water for 20 minutes
- bring 5 cups of water to boil and add a tsp of oil
- once water starts to boil, add soaked rice and mix well
- cook the rice on medium flame until 95% of rice cooked
- drain the water and keep the cooked rice aside and allowed the rice to cool at room temperature
- in the mixer jar, add cloves, cinnamon stick, star anise, marathi moggu, fennel seeds, garlic, ginger, green chilli, mint and coriander leaves
- grind to a smooth paste with little water and set aside
- in a small mixing bowl, break the eggs and add salt and pepper
- whisk well
- to scramble the eggs, heat a tsp of sesame oil in the pan, add egg mixture and wait for few seconds and then gently scramble and cook for 1 minute and then switch off the flame, keep the scrambled eggs aside
- now for the egg rice, heat 2 tbsp sesame oil in the pan, add finely chopped onion and green chillies
- saute well for 2-3 minutes or until the onion turns transparent
- once the onion turns transparent, add ground masala paste and red chilli powder
- mix well and cook for 1-2 minute, the oil starts to separate from the masala
- add finely chopped cabbage and saute for about 4-5 minutes or until the cabbage is half cooked
- add salt, sugar and soy sauce
- mix well to combine and then add cooked basmati rice, scrambled eggs and chopped coriander leaves
- combine well with the veggies and masalas
- cover with lid and cook for 1-2 minute in low flame and then switch off the flame
- Egg rice is ready and serve hot

NOTES
- this dish can be easily doubled
- adjust green chillies and spice level according to your taste
- here i used basmati rice, you can also use sona masoori rice or seeraga samba rice, it tastes good

STREET STYLE EGG RICE WITH STEP BY STEP PHOTO RECIPE
cook the rice with a tsp of salt and enough water and
drain the excess water and keep the rice aside
in the mixer jar, add cloves, cinnamon stick, star anise, marathi moggu, fennel seeds, garlic, ginger and green chilli
add coriander leaves and mint leaves
add little water and grind to a smooth paste and set aside
break the eggs in a bowl and add salt and pepper powder
whisk well for few seconds
heat a tsp of sesame oil
add the egg mixture
wait for few seconds and then gently scramble the eggs
cook the scrambled eggs for a minute and then switch off the flame
now, heat 2 tbsp sesame oil in another pan, add finely chopped onion and green chillies
saute well until it turns transparent
add ground masala paste and red chilli powder
mix well and cook for 2 minutes till the oil separates from the masala
add finely chopped cabbage
mix well and cook the cabbage for 5 minutes
now add salt, sugar and soy sauce
mix well
add cooked basmati rice, scrambled eggs and chopped coriander leaves
combine well with the veggies
cover with lid and cook for 1-3 minutes in low flame
egg rice ready
serve immediately
