Seeraga Samba rice


Seeraga samba airsi is a tiny grained rice which is usually to make biryani in South India. This tiny grained rice gets its name from its resemblance  to cumin, which is known as Seeragam (cumin seeds) in Tamil Nadu. It is also known as Kaima rice.  

If you do not have Seeraga Samba rice, you can substitute with Basmati Rice. This is one of the best  biryani with full of very distinct flavors, which comes from the rice, whole spices, especially black stone flower and cardamom. The whole recipe can be prepared in less than an hour. Soak the Seeraga Samba rice in water for minimum 30 minutes for better taste.

RECIPE FOR SEERAGA SAMBA RICE 

VEG BIRYANI

Seeraga Samba rice

INGREDIENTS

  • 1.5 cup seeraga samba rice
  • 1 tbsp ghee
  • 2 tbsp oil
  • 3 cloves
  • 2 inch cinnamon stick
  • 2 bay leaf
  • 1 star anise
  • 2 cardamom
  • 1 black stone flower
  • 1 large onion - thinly sliced
  • 5 garlic
  • 2 inch ginger
  • 3 green chilli
  • handful of mint leaves
  • handful of coriander leaves
  • 1 tomato - chopped
  • 1/4 cup carrot -  chopped
  • 1/4 cup beans - chopped
  • 1/4 cup peas
  • 1/4 cup potato - chopped
  • 1/4 cup curd/yogurt
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • salt to taste
  • 3 cup water

PROCEDURE

  • soak rice in water for 45 minutes
  • grind ginger, garlic and green chilli with little water, keep the paste aside
  • chop all the veggies
  • take a heavy bottomed pan with lid
  • heat ghee and oil
  • add cloves, cinnamon stick, bay leaf, black stone flower, cardamom and star anise
  • saute well for 30 seconds on medium flame
  • add thinly sliced onion
  • saute well until it turn translucent
  • add ground paste and saute well until the nice aroma goes
  • then add mint leaves, coriander leaves and chopped tomato
  • saute well until it turns mushy
  • add chopped veggies
  • mix and saute well in medium flame for 2 minutes
  • add curd/yogurt and mix well
  • add turmeric powder, red chilli powder, coriander powder and garam masala powder
  • mix well 
  • cover with lid and cook in low medium flame for 5-7 minutes or until the oil leaves the sides of the pan
  • add soaked rice
  • mix well and cook for 1 minute
  • add 3 cup water and salt
  • mix well
  • cover with lid and cook in high flame for 10 minutes, and then cook in low flame for 15 minutes
  • then switch off the flame, open the lid after 15 minutes
  • dum veg biryani ready
  • serve with onion raitha
  • Taste Delicious !
NOTE
  1. Adjust the salt and spices according to your taste
  2. Instead of seepage samba, you can use basmati or raw rice
  3. soak the rice in water minimum 30 minutes for best results
  4. add veggies according to your preference

Step-By-Step Photo Recipe


take 1.5 cup seeraga samba rice


soak in water for 45 minutes


heat ghee and oil in heavy bottomed pan


add cloves, cinnamon stick, bay leaf, black stone flower, star anise and cardamom, saute for few second till the nice aroma 


add thinly sliced onion


saute well


grind ginger, garlic and green chilli with little water


add ground paste


saute well until the raw smell goes off


add mint and coriander leaves


saute well for 30 seconds


add chopped veggies


mix well 


close with lid  and cook the veggies in medium flame for 2 minutes


add curd / yogurt


add turmeric powder, red chilli, coriander and garam masala powders


mix well


close with lid and cook in low flame until the oil separates from the veggies


oil started to separate from the veggies


add soaked rice


mix well and cook for 1 minute


add 3 cup water


add salt


mix well


cover with lid and cook in high flame for 10 minutes, and then cook in low flame for 15 minutes


 switch off the flame, open the lid after 15 minutes
