Dry Egg Roast - This Tamil Nadu style egg roast is one of the easy and tasty side dish that you can prepare very quickly with minimal spices. This terrific side dish makes an excellent accompaniment with Biryani, Rasam rice or Sambar rice. Adding curry leaves to the egg gives an excellent aroma to this egg roast.

The perfect way to get the hard boiled eggs, always drop the egg in boiling water and boil for 10 minutes then drop the egg in cold water and then peel the skin for the perfect boiled eggs. Adding pinch of salt to the boiling water will help to prevent the eggs from cracking.

Add 1 tbsp of oil is enough for this egg roast, if you too much oil, the spices will get separate from the egg and you won't get the proper egg roast. Adjust spice level according to your taste.   • 3 eggs
  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • 1 spring curry leaves - chopped - divided
  • 2 tbsp onion - chopped
  • 1/8 tsp turmeric powder
  • 1.5 tsp red chilli powder
  • 1/2 tsp cumin powder
  • salt to taste
  • 1/2 tsp pepper powder


  • boil the eggs with a pinch of salt
  • remove the shell and discard it
  • cut the eggs vertically into two half and keep aside
  • heat oil in a pan
  • add mustard seeds and allowed to crackle
  • add a tbsp of chopped curry leaves and allowed to turn crisp
  • add chopped onion
  • saute well until it turns light brown
  • add turmeric powder, red chili powder, cumin powder and salt
  • mix well
  • add cut boiled eggs
  • toss well with the masala
  • cook for 4-5 minute, until the raw smell of spices goes
  • stir occasionally
  • add black pepper powder and mix well
  • continue to roast the egg in high flame for 30 seconds to 1 minute
  • add remaining chopped curry leaves
  • mix well and then switch off the flame
  • serve hot with steamed rice or rasam rice or biryani
  • taste delicious

Dry Egg Roast with step by step photo recipe

take 3 hard boiled eggs

cut vertically into two half

heat a tbsp of oil

temper with mustard seeds

add curry leaves, saute well and allowed to turn crisp

add finely chopped onion

saute well

add turmeric powder, red chilli powder, cumin powder and salt

mix well

add eggs

toss well with the masala, roast on low medium flame 

cook for 4-5 minutes

add pepper powder and remaining chopped curry leaves

cook on high flame for 30 seconds, then switch off the flame

Egg Roast ready to serve with Biryani, Rasam rice or Sambar rice
