Nadan Mutta Roast is one of the staple egg recipe in the land of Kerala, mostly served on breakfast table across the state. 

Kerala egg roast is one of the easy and tasty side dish that you can prepare very quickly. It is usually served for breakfast with appam, idiyappam, dosa, chapathi or puttu. 

The perfect way to get the hard boiled eggs, always drop the egg in boiling water and boil for 10 minutes then drop the egg in cold water and then peel the skin for the perfect boiled eggs. Adding pinch of salt to the boiling water will help to prevent the eggs from cracking.

For Nadan Mutta Roast, just caramelize the onions, add you favorite spices and saute well, then add hard boiled eggs and cook for 5-6 minutes till the oil separates. Adjust spice level according to your taste. Please don’t add ginger garlic paste and tomato to this dish.

RECIPE FOR NADAN MUTTA ROAST

INGREDIENTS

  • 3 eggs - hard boiled and shell removed
  • 2 tbsp oil - sesame oil or coconut oil
  • 2 onion - thinly sliced
  • 8 garlic - finely chopped
  • 2 tsp ginger - chopped
  • 2 green chilli - finely chopped
  • 1/2 tsp turmeric powder
  • 1.5 tsp red chilli powder - i used spicy variety
  • 2 tsp coriander powder
  • 1 tsp garam masala powder
  • salt to taste
  • 3/4 cup water

PROCEDURE

  • heat oil in the pan
  • add thinly sliced onion and saute well for 4 minutes or till it turns translucent
  • add chopped garlic, ginger and green chilli
  • saute well for another 4 minutes or until the onion turns light brown color
  • add turmeric powder, red chilli powder, coriander powder and garam masala powder
  • mix well with onions and cook the spices for 1 minute
  • now add salt and water
  • mix well
  • cover with lid and cook in low medium flame for 3 minutes or until the curry thickens
  • once the oil starts to separate from the curry, add hard boiled eggs and mix well
  • cover and cook again in medium flame for 3 minutes or until the oil starts to float on top
  • once the egg curry thickens, switch off the flame and serve hot with chapathi, rice, roti, dosa, appam, etc.,
  • Enjoy!
NOTES
  • try to make slits all the sides of the egg
  • do not add ginger garlic paste
  • add a tsp of sugar before switch off the flame to balance the curry

heat oil in the pan, add thinly sliced onion, saute well until transparent


add chopped garlic, ginger and green chilli


saute for 5 minutes in medium flame until onion slightly browned


add turmeric powder, red chilli powder, coriander powder 
and garam masala powder


saute for 1-2 minutes until the raw smell of spices goes


add salt and water


mix well


cover and cook in medium flame for 3 minutes


curry thickens slightly


add 3 hard boiled eggs


coat well with all the masalas


cover and cook again in low medium flame for 3 minutes
