HYDERABADI CHICKEN MAJESTIC | STARTUP COOKING
Chicken Majestic is a dry chicken appetizer recipe from Hyderabad, India. It’s basically a fried chicken coated in a spicy, tangy yogurt based sauce. It tastes crispy on the outside and tender and juicy from inside. This Hyderabadi Chicken Majestic is an easy chicken recipe that can be made quickly at home. It tastes the same as served in many Indian Restaurants.
Here, the chicken pieces are soaked in buttermilk, deep fried and then tossed in spicy curd based sauce. This majestic chicken is a very tasty appetizer which will be gone within minutes after serving, very addictive. You can serve as a side dish with your meals, rice, kuzhambu or rasam. Try to use boneless chicken breast or thigh pieces to cook easily.

INGREDIENTS
To Marinate
- 1/2 kg boneless chicken – cut into thin strips
- 1 tsp salt
- 1 cup buttermilk
- 1 juice of lemon
- 1 tsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 2 tbsp corn flour
- 1 egg
- oil – for deep frying
For Chicken Majestic
- 2 tbsp oil
- 6 garlic – thin
- 5 green chilli – slit
- 1 spring curry leaves
- 1/4 cup curd – whisked well
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 2 tsp soy sauce
- salt – to taste
- 1 tbsp mint leaves – chopped
- 1 tbsp coriander leaves – chopped

PROCEDURE
- cut the boneless chicken in to thin strips
- to the bowl, add salt, buttermilk and lemon juice
- mix well with the chicken and rest the bowl for 2 hours
- after 2 hours, remove the excess buttermilk and add ginger garlic paste, turmeric powder, red chilli powder, corn flour and egg
- mix well and rest the bowl for another 1 hour
- now heat oil in a pan, gently drop the chicken in batches and fry in medium until it turns crispy, golden brown and cooked thoroughly
- remove the chicken from oil and set aside
- heat 2 tbsp oil in the pan, add thinly sliced garlic, green chillies and curry leaves
- saute for few minutes
- reduce the flame, add whisked curd, turmeric powder, red chilli powder, coriander powder and cumin powder and salt
- saute for 1-2 minutes or until the raw smell of spices goes
- now, add soy sauce and saute for 1 minute and then add fried chicken pieces
- mix well and saute on high flame for 1 minute and then switch off the flame
- garnish with chopped mint and coriander leaves
- chicken majestic is ready
- Enjoy with chapathi, biryani or as starter
NOTES
- adjust spice level according to your taste
- do not overcrowd chicken pieces when frying, leave space between them will allow them to brown and cook more evenly
- try to cut the chicken into thin strips

Hyderabadi Chicken Majestic With Step By Step Photo Recipe
cut chicken breasts in to thin strips and clean well in running water
add buttermilk, salt and lemon juice, mix well
rest the bowl for minimum 2 hours
after 2 hours, discard the excess buttermilk
add turmeric powder, red chilli powder, ginger garlic paste
and corn flour
add egg
mix well and rest the bowl again for another 1 hour at room temperature
after 1 hour, drop the chicken pieces in hot oil and
fry in medium flame
fry until it turns crispy and golden brown
remove the fried chicken strips from oil and set aside
heat 2 tbsp oil in the pan, add thinly sliced garlic, green chilli and curry leaves
saute for few seconds
add whisked curd, turmeric powder, red chilli powder, coriander powder, cumin powder and salt
mix well and cook for 2 minutes or until the raw smell of spices goes
add soy sauce
mix well and cook for 1 minute
add fried chicken
toss well and cook on high flame for 1 minute and
then switch off the flame
garnish with chopped mint and coriander leaves
mix well
serve hot with rice or chapathi
