Ingredients
1 tbsp oil
1/2 tsp mustard seeds
1 tsp urad dal
1 tsp chana dal
1/8 tsp hing
1 spring curry leaves
3 green chillies
1 onion – finely chopped
salt – as needed
4 potatoes – boiled and crumbled
Directions
- wash and boil the potatoes until soft and fully cooked. peel the skin and crumble them gently using your fingers or a potato masher. keep the texture slightly coarse for the best taste.
- heat oil in a pan and add mustard seeds. Once they splutter, add urad dal, curry leaves, green chillies, and finely chopped onions. Saute until the onions turn soft and lightly golden.
- add a little salt and mix well so the spices coat the onions evenly and release a nice aroma.
- add the crumbled potatoes to the pan and gently mix everything together. cook on low flame for a few minutes until the potatoes absorb the flavors of the seasoning without becoming mushy.
- finish with fresh coriander leaves if desired (I didn’t add) and serve hot with steamed rice and kuzhambu varieties like poondu kuzhambu, sukku milagu kuzhambu, or vatha kuzhambu for a comforting South Indian meal.
Notes
- you can adjust green chillies according to your spice preference
- fresh curry leaves enhance the aroma and taste of the dish
- crumble the potatoes gently for the best soft and fluffy texture. avoid mashing them completely

INGREDIENTS
- 5 potato
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1 tsp urad dal
- 1 tsp bengal gram dal
- 1/4 tsp hing/asafoetida
- 1 spring curry leaves
- 2 green chilli – finely chopped
- 1 onion – finely chopped
- salt as needed
PROCEDURE
- boil 5 potatoes
- peel the skin and discard it
- mash the potatoes using potato masher and keep it aside
- heat oil in a wok
- add mustard seeds and allowed to crackle
- add urad dal, bengal gram dal and allowed to turn golden brown
- add hing, curry leaves and allowed to turn crisp
- add finely chopped green chilli and onions
- saute until light golden brown
- add salt
- add mashed potatoes
- combine well with the seasonings
- cover and cook for 5 minutes
- serve along with garlic gravy, sambar rice or rasam rice
- tastes great

boil 5 potato in pressure cooker for 3 whistle
peel the skin and discard it
mash the potato using potato masher
heat oil in a wok
add mustard seeds and allowed to crackle
add urad dal and bengal gram dal, saute till the dal color changes to light brown color
add curry leaves
add chopped green chilli
add finely chopped onion
saute well till it turn translucent
add salt
add mashed potato
combine well with the seasonings, cover and cook for 5 minutes
