Vendakkai Verkadalai Poriyal is a delicious South Indian style stir fry variety made with okra and peanuts.
This is a simple recipe and can be prepared quickly. It goes well with sambar rice, rasam rice, curd rice, etc., Lady’s Finger is known as Okra. It is also known as Vendakkai in Tamil, Bhindi in Hindi and Bendakaya in Telugu.
It is one of the highly nutritious low calorie vegetable that is often used to prepare sambar, curry or stir fry in Indian cuisine. This green veggie is filled with folic acid, vitamin B, vitamin C, vitamin A, vitamin K, calcium, fiber, potassium and some antioxidants.
There are few points to keep in mind for making perfect non-sticky okra fry. Firstly, make sure to wash and wipe and dry the okra well using a kitchen towel and then chop it. Do not add water or cover with lid while cook the okra. For the spice, you can add red chilli powder, pepper powder or green chillies.

INGREDIENTS
- 1/2 kg vendakkai (okra)
- 2 tsp oil
- 1/2 tsp mustard seeds
- 1 tsp urad dal
- 1/8 tsp hing
- 1 spring curry leaves
- 1 onion – finely chopped
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- salt to taste
- 3 tbsp peanuts – roasted

PROCEDURE
- clean the vendakkai and cut off the edges and discard it and then cut the vendakkai into small pieces
- heat a tbsp of oil in the pan and add chopped vendakkai and saute for 5 -7 minutes until no longer slimy (non sticky) to each other and it should be slightly roasted
- do not cover the pan until it is completely roasted, once vendakkai cooked thoroughly, remove from the pan and set aside
- again in the same pan, heat a tsp of oil and temper with mustard seeds, urad dal, hing and curry leaves
- once urad dal turns to light brown color, add finely chopped onion and saute well until it turns translucent
- now add roasted vendakkai along with turmeric powder, red chilli powder and salt
- mix well
- now cover with lid and cook on low medium flame for 5 minutes or until the raw smell of spices goes (stir occasionally)
- add roasted peanuts and mix well, cook for another 1-2 minutes and then switch off the flame
- serve with sambar rice, curd rice or lemon rice

- adjust spice level according to your taste
- you can add green chillies instead of red chilli powder
- i like to roast the vendakkai separately instead of roasting along with onions

Okra Peanut Stir Fry With Step By
Step Photo Recipe
take a bunch of vendakkai
cut off the edges and discard it
cut the vendakkai into small pieces
heat a tsp of oil in the pan
add chopped vendakkai
saute the vendakkai in medium flame until no longer slimy (do not cover with lid)
once all the vendakkai roasted well,
remove from the pan and set aside
heat a tsp of oil in the pan and temper with mustard seeds, urad dal, hing and curry leaves
add finely chopped onion
saute well until it turns translucent
add roasted vendakkai
add turmeric powder, red chilli powder and salt
mix well
cover with lid and cook for 2-3 minutes or cook until
the raw smell of spices goes
vendakkai cooked thoroughly
now add roasted peanuts
mix well and cook for 1-2 minute and then switch off the flame
serve with sambar rice, lemon rice or curd rice
