INGREDIENTS
- 1.5 cup cooked rice – sona masoori rice / basmati rice
- 2 tbsp oil
- 1/4 tsp mustard seeds
- 1 tsp urad dal
- 1 tsp bengal gram dal
- 1/2 tsp fennel seeds
- 1 spring curry leaves
- 1 large onion – thinly sliced
- 3 green chilli – slitted
- 1.5 tsp ginger garlic paste
- 3 tomatoes – chopped
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/2 tsp garam masala powder
- salt – to taste
- 1/4 cup coriander leaves – chopped
- 1 tbsp ghee

PROCEDURE
- heat oil in the pan and temper with mustard seeds, urad dal, bengal gram dal, fennel seeds and curry leaves
- add thinly sliced onion and saute well until translucent
- add slitted green chillies and ginger garlic paste
- saute well until the raw smell goes
- add chopped tomatoes, turmeric powder, red chilli powder, garam masala powder and salt
- mix well and saute for 2-3 minutes
- now cover with lid and cook the tomatoes in low medium flame for 5 minutes
- after 5 minutes tomatoes turn mushy and the oil starts to release on the sides and there should be no raw smell of spices
- add cooked rice and gently mix well
- cover with lid and cook in low flame for 5 minutes and then garnish with chopped coriander leaves and a tbsp of ghee
- delicious tomato rice is ready and serve hot with onion raitha or papad

NOTES
- adjust spice level according to your taste
- use sona masoori rice or basmati rice goes well for tomato rice
- you can also use left over rice for this dish
- use ripe tomatoes for better results

STEP PHOTO RECIPE
heat oil in the pan and temper with mustard seeds
add urad dal, bengal gram dal, fennel seeds and curry leaves
saute for few seconds
add thinly sliced onion
saute well until it turns translucent
add ginger garlic paste and slitted green chilli
saute well until the raw smell goes
add chopped tomatoes, turmeric powder, red chilli powder, garam masala powder and salt
mix well and cook for 2 minutes
cover with lid and cook again for another 5 minutes in
low medium flame
oil starts to release on the sides of the pan
mix well
add cooked rice
mix gently with the tomato masala
cover with lid and cook for 5 minutes in low flame
garnish with chopped coriander leaves and serve
hot with raitha or papad
