Beetroot Halwa - a delicious dessert prepared from nutrition rich beetroot, has a rich and creamy texture and tastes similar to carrot halwa. Preparing this delicious dessert at home in traditional way is very simple and requires just 4 basic ingredients - beetroot, milk, sugar and ghee. This halwa even tastier and aromatic by adding  cardamom and roasted cashews. This delicious dessert is always made during festivals and happy occasions like Diwali and New year. RECIPE FOR BEETROOT HALWA

INGREDIENTS
  • 1 large beetroot or 2 cup grated beetroot
  • 2 cup milk
  • 1 cup sugar
  • 1/4 cup ghee
  • 1/2 tsp cardamom powder
  • 2 tbsp cashews

PROCEDURE
  • take 1 large beetroot, wash well, trim the edges and peel off the skin
  • grate the beetroot using grater
  • bring milk to boil in a sauce pan, then switch off the flame
  • heat 1 tbsp ghee in a pan
  • fry cashews in ghee, it changes golden brown color, remove from the flame and keep it aside
  • heat a tbsp of ghee in a pan, add grated beetroot
  • saute for 5 minutes in low flame or until the raw smell of beetroot goes
  • beetroot leaves the moisture and becomes totally dry
  • now add boiled milk
  • mix well
  • cook in low medium flame for 10-15 minutes
  • beetroot becomes soft and cooked well
  • keep cook in low flame for the milk to reduce
  • milk starts bubbling
  • stir well and keep scraping the sides
  • once milk is totally reduced, add sugar
  • mix well 
  • keep cooking and stirring the whole mixture
  • now beetroot halwa look glossy and sticky
  • keep stirring so that it does not stick to the bottom of the pan
  • add ghee little by little and stir well
  • add cardamom powder
  • mix well
  • when the whole mixture becomes dry and non sticky, add fried cashews with remaining ghee
  • mix well and switch off the flame
  • yummy 😋 delicious 😋 Beetroot Halwa Ready 
  • serve warm 😋👌👌
Note :
  1. once beetroot cooked well, then add sugar
  2. to make halwa faster, pressure cook the beetroot for 1 whistle after the milk is added
  3. cook the entire process in low medium flame
  4. adjust sugar as per your taste
  5. keep in refrigerator for 1 week
  6. serve hot or warm
  7. tastes yum 😋

BEETROOT HALWA WITH STEP-BY-STEP PHOTO RECIPE


take 1 large beetroot


trim the edges and peel off the skin, wash well


grate the beetroot using grater


its around 2 cup of grated beetroot


add milk in sauce pan


bring milk to boil well and then switch off the flame, keep it aside


heat a tbsp of ghee in a pan


fry cashews in ghee


it changes golden brown color, switch off the flame and keep it aside


heat a tbsp of ghee in another pan


add grated beetroot


saute well in low flame for 5-8 minutes or until the raw smell of beetroot goes


beetroot leaves the moisture and becomes totally dry


add boiled milk


mix well and cook in low medium flame for 10-15 minutes


milk starts bubbling and keep cook in low flame


beetroot becomes soft and fully cooked


keep cook in low flame for the milk to reduce, stir well and keep scraping the sides


milk is totally reduced


add sugar


mix well


keep cooking and stirring the whole mix


halwa looks glossy and sticky


keep stirring so that it does not stick to the bottom of the pan


add ghee little by little


continue to cook well on low flame


add cardamom powder and a tbsp of ghee, mix well


add fried cashews and the remaining ghee


whole mix becomes dry and non sticky, mix well and switch off the flame
