1 tbsp chana dal
1 tbsp urad dal
1/4 tsp cumin seeds
6 garlic
10 shallots
3 red chillies
1 inch tamarind
salt
- FOR SEASONING
1/4 tsp mustard seeds
1 tsp urad dal
1/4 tsp hing
1 spring curry leaves
Directions
- heat oil in a pan. add chana dal, urad dal, and cumin seeds. Saute until the dals turn golden brown.
- add shallots, garlic, dry red chillies, and tamarind. saute until the shallots become soft and translucent
- switch off the flame and allow the mixture to cool slightly
- transfer everything to a mixer grinder, add salt and grind into a smooth paste without adding water
- transfer the chutney into a serving bowl
- for the tempering, heat 1 tsp oil in a small pan. add mustard seeds and let them splutter. add urad dal, hing and curry leaves. saute briefly
- pour the tempering over the chutney and mix slightly
- serve with dosa or idli
Notes
- roast the dals on medium flame to avoid burning
- adjust the number of red chillies according to spice preference
- use small shallots for best flavor and slight sweetness
- do not add water while grinding for a thick, flavorful chutney
