Boiled Egg bhurji is a delicious variation of the classic Indian anda bhurji recipe where instead of adding raw eggs to the masala, boiled eggs are added.

Boiled egg Bhurji an absolutely lip-smacking preparation and is so easy to make that it would end up featuring regularly on your Sunday brunch menu. It is one of the staple egg recipe in the India mostly served on breakfast table with roti, toasted bread or chapathi  across the country. 

The perfect way to get the hard boiled eggs, always drop the egg in boiling water and boil for 10 minutes then drop the egg in cold water and then peel the skin for the perfect boiled eggs. Adding pinch of salt to the boiling water will help to prevent the eggs from cracking.

For this easy egg recipe, cook hard boiled eggs, cool down at room temperature and then gently scramble using knife and finally mixed up  with onion, ginger, garlic, green chillies, tomato and spicy powders. An easy and tasty egg bhurji recipe that you can prepare very quickly in 30 minutes. Adjust spice level according to your taste. Please don’t add ginger garlic paste to this dish.

RECIPE FOR BOILED EGG BHURJI

INGREDIENTS

  • 5 eggs - hard boiled
  • 3 tsp oil
  • 1 tbsp unsalted butter
  • 1 onion - finely chopped
  • 2 green chillies - finely chopped
  • 1 tsp garlic - chopped
  • 1 small piece of ginger - chopped
  • 1/2 cup tomatoes - chopped
  • 1/4 tsp turmeric powder
  • 1/2 tsp kashmiri red chilli powder
  • 1 tsp coriander powder
  • 2 tsp pav bhaji masala
  • salt - to taste
  • 1 tsp lime juice
  • 1 tbsp coriander leaves - chopped

PROCEDURE

  • take hard boiled eggs in a board and chop the eggs into small pieces and set them aside
  • heat oil and unsalted butter in a pan over medium heat
  • once the oil is hot, add finely chopped onions, green chillies, garlic and ginger, and fry until the onions are light brown in color. Stir frequently while frying
  • now, add chopped tomatoes, turmeric powder, kashmiri red chilli powder, coriander powder, pav bhaji masala and salt, mix well and stir continuously and cook for 1 minute
  • add the chopped hard boiled eggs to the pan and mix well with the masala
  • finally add lime juice and chopped coriander leaves and mix well
  • serve hot with chapathi, hot steamed rice, etc.,
NOTES
  • adjust spice level according to your taste
  • you can also add your favorite veggies like peas, corn, bell peppers, carrot, etc.,

BOILED EGG BHURJI WITH STEP BY STEP PHOTO RECIPE


take 5 boiled egg in a bowl


cut down in to small pieces and set aside


heat oil in a pan and add finely chopped onion, green chillies, garlic and ginger


saute well until transparent


add chopped tomato


add turmeric powder, kashmiri red chilli powder, coriander powder, pav bhaji masala powder and salt


mix well and cook the masala until the oil leaves out


now add scrambled boiled eggs


mix well and allow the masalas to coat on all the eggs


garnish with chopped coriander leaves


close with lid and cook on low flame for 4-5 minutes


turn off the stove

serve with toasted bread, roti or chapathi
