Kovakkai is also known as Tindora / Ivy Gourd. It is also known as Dondakaya Pachadi.

Kovakkai thogayal is very simple lentil chutney prepared with urad dal, bengal gram dal, red chilli, green chilli, garlic, shallots, tamarind and grated coconut. This is one my best signature dish. It tastes heavenly delicious when served with hot steamed rice along with a tsp of sesame oil. It goes well with dosa and chapathi too.  This recipe is very easy to prepare in less than 20 minutes.

Spinach Recipes

INGREDIENTS

  • 2 tbsp oil - splitted
  • 15 kovakkai (tindora)
  • 1 tbsp urad dal
  • 1 tbsp bengal gram dal
  • 2 garlic
  • 3 tbsp onion - chopped
  • 2 green chilli
  • 2 red chilli
  • small piece of tamarind
  • salt to taste
  • 3 tbsp coconut - grated

PROCEDURE

  • clean and chop the kovakkai into thin circles and keep aside
  • heat a tsp of oil in the pan, add chopped kovakkai and pinch of salt
  • saute well in low medium flame for 10-15 minutes or until the kovakkai in slightly fried and cooked
  • remove the kovakkai from the pan and transfer in to mixer grinder
  • heat a tsp of oil in the pan and add urad dal and bengal gram dal
  • saute for few minutes, till the dal turns golden brown color and then transfer into mixer grinder
  • heat a tsp of oil in the pan, add chopped onion, garlic, green chilli and red chillies
  • saute well until they transparent and then switch off the flame
  • add roasted onion mix into the mixer grinder along with grated coconut, salt and tamarind
  • sprinkle little water and grind to a smooth paste
  • kovakkai thogayal is ready
  • serve with hot steamed rice with a tsp of ghee or sesame oil
  • you can also serve as a side dish for dosa or chapathi

NOTES
  • adjust spice level according to your taste
  • cut the tindora into very thin slices, it will be very helpful to cook easily
  • you can also skip adding coconut and store in refrigerator for 2 days

heat oil in the pan and add thinly sliced kovakkai


saute in medium flame for 10-15 minutes


transfer into mixer grinder


heat a tsp of oil in the pan, fry urad dal and bengal gram dal until golden brown and then transfer into mixie


heat a tsp of oil in the pan, add chopped onion, garlic, 
green chilli and red chilli


saute well until they turn transparent


transfer into mixer grinder


add tamarind, salt and grated coconut


sprinkle little water and grind to a smooth paste
