Aloo Palak Gravy is an evergreen delicacy from North Indian cuisine and its one of the most interesting way to include spinach in your diet along with yummy potatoes. Spinach is also called as Palak in Hindi and its one of the traditional recipe, which is perfect for special occasions, festivals, pot lucks or any get together.

Aloo palak gravy tastes better when served with chapathi, roti or jeera rice. This recipe is high on fibre and rich in iron. This recipe is very easy to cook and made within 35 minutes.

RECIPE FOR ALOO PALAK GRAVY

INGREDIENTS

  • 3 potato - medium sized
  • 2 cup spinach
  • 2 green chilli
  • 1 tbsp unsalted butter
  • 3 cloves
  • 1 inch cinnamon stick
  • 1 bay leaf
  • 1/8 tsp hing
  • 1 onion - finely chopped
  • 1 tbsp ginger garlic paste
  • 1 small tomato - chopped
  • 1.5 tbsp besan flour
  • 1 cup water
  • 1/4 tsp turmeric powder
  • salt to taste
  • 1 tsp kasoori methi - crushed

PROCEDURE

  • boil the potatoes in the pressure cooker
  • peel the skin and chop the potatoes, set aside
  • bring 3 cups of water to boil in a sauce pot
  • add spinach leaves
  • cook for 30 seconds and then switch off the flame
  • rest for 1 minute and then drain the excess water
  • add cooked spinach leaves into the mixer grinder
  • add green chillies and grind to a smooth paste, set aside
  • heat unsalted butter in the pan
  • temper with cloves, cinnamon stick and bay leaf
  • add finely chopped onion
  • saute well until the onions turn transparent and light brown
  • add ginger garlic paste
  • saute well until the raw smell goes
  • add chopped tomato and saute well till it becomes soft and mushy
  • in the meanwhile mix besan flour in water without any lumps
  • add turmeric powder, hing and besan water
  • mix well and the gravy becomes thick
  • now add spinach puree
  • mix well and adjust the consistency of the gravy by adding more water 
  • add salt and mix well
  • cover and cook the gravy for 1-2 minute in low medium flame, butter starts to separate from the gravy
  • add boiled chopped potato, Garam Masala powder and crushed kasoori methi
  • mix well
  • cook for another 1-2 minute and then switch off the flame
  • serve hot with Chapathi or roti
  • taste delicious
NOTES
  • adjust spice level according to your taste
  • kasoori methi is optional, but its very flavorful
  • adding besan flour gives more thickness to the gravy

Aloo Palak Gravy with Step By Step Photo Recipe



boil 3 potatoes in pressure cooker


bring water to boil in the sauce pot


add spinach leaves


rest for 1 minute then switch off the flame


drain the excess water


add into mixer grinder along with green chilli


grind to a smooth paste


heat butter in a pan


temper with cloves, cinnamon stick, bay leaf


add finely chopped onion, saute well until transparent and light brown


add ginger garlic paste and saute well until the raw smell goes


add chopped tomato, saute well until mushy


take besan flour in the mixing bowl


add water and whisk well without any lumps


add in to the pan along with turmeric powder and hing


add spinach puree


add water and adjust the consistency of the gravy


add salt


mix well


cover and cook in low medium flame for 1-2 minute or until the butter starts to separate on top of the curry


gravy is ready


add boiled chopped potato, Garam Masala powder and kasoori methi


mix well


cover and cook for another 1-2 minute


aloo palak gravy is ready to serve


serve with chapathi, roti or rice
