Quinoa is nutritious, it is very high in fiber, much higher than most grains. It is very high in protein too with all the essential amino acids. It is gluten-free and perfect for people with Gluten Intolerance and may help you lose weight. Here I made Quinoa Adai without rice, so it is diabetic friendly too, which is very easy to prepare, healthy and taste delicious 😋.  This recipe is from South Indian cuisine. RECIPE FOR QUINOA ADAI

INGREDIENTS
  • 1/2 cup quinoa
  • 1/8 cup toor dal
  • 1/4 cup chana dal (bengal gram dal)
  • 1/8 cup green gram dal
  • 1 tbsp moong dal
  • 1/2 tsp cumin seed
  • 1.5 tsp fennel seed
  • 4 red chilli
  • 1 tbsp ginger
  • 1 cup water
  • 1 small onion - finely chopped
  • 2 tbsp coriander leaves
  • 1 tsp hing/asafoetida
  • salt as needed
  • oil as needed to make Adai

PROCEDURE

  • in a large mixing bowl, add quinoa, toor dal, chana dal, green gram dal and moong dal
  • wash the lentils well
  • soak in water for 5-6 hours
  • drain the water and transfer the lentils to mixer grinder
  • now add fennel seeds, cumin seeds, ginger and red chili
  • grind to a slightly coarse paste
  • transfer back to the mixing bowl
  • add salt and hing
  • mix well
  • add finely chopped onion and coriander leaves
  • combine well
  • add enough water to adjust the consistency. (it should be like idli batter consistency)
  • heat cast iron tawa, pour 2 ladles of batter and make it into a circular shape (we need thick Adai)
  • drizzle a tsp of sesame oil on top of Adai
  • cook on low medium flame
  • when edges turn golden brown flip over to other side  and cook well
  • serve hot with coconut chutney or ginger chutney or with palm sugar
  • taste yum 😋 

Notes: do not grind it too smooth, it should be slight coarse for great taste

QUINOA ADAI WITH STEP-BY-STEP PHOTO RECIPE


in a large mixing bowl, add quinoa


add toor dal


add green gram dal


add bengal gram dal


add moong dal


wash the lentils well and soak in water for 5-6 hours


soaked dal



add into the mixer grinder


take red chili, cumin seed, fennel seed and ginger


add into the mixer grinder


grind to a slight coarse paste for better taste


transfer back in to the mixing bowl


take enough Adai batter in another mixing bowl


add finely chopped onion and coriander leaves


add enough water to make Adai


add salt


add hing


combine altogether


heat a cast iron tawa


pour a ladle full of batter and make it into a circular shape


drizzle a tsp of oil and cover with lid


when edges turn golden brown, flip over to other side and cook well
