 SPICY GARLIC POTATO FRY RECIPE | STARTUP COOKING


Spicy Garlic Potato Fry is very simple and tasty recipe with basic ingredients. This potato fry is spiced with red chilli powder but tastes great. This fry is widely eaten in every part of South India. Garlic potato fry is very flavorful and is flavored with garlic and fennel seeds and it can be made under 30 minutes.

Potato can be cooked in 2 ways, open pot method or pressure cook method, its very important step in the whole process, don’t over cook the potato or else it will turn mushy. I am a great fan of garlic, almost i used to include in most of the recipes, if you don’t like, reduce the amount of garlic.

This recipe is very easy to prepare and super delicious, goes well with any variety rice, rasam rice or curd rice. This potato fry will be little spicy, so adjust the spice level according to your taste. Follow my step by step photo recipe to prepare Spicy Garlic Potato Fry. RECIPE FOR SPICY GARLIC POTATO FRY

INGREDIENTS

  • 3 medium sized potatoes
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp fennel seeds
  • 1 spring curry leaves
  • 2 red chilli
  • 1 onion - thinly sliced
  • 10 garlic - crushed
  • 1 tsp ginger garlic paste
  • 1 tomato - chopped
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder - i used spicy variety
  • 1 tsp coriander powder
  • 1 tsp kashmiri red chilli powder
  • salt to taste
  • 1/2 cup water

PROCEDURE

  • take 3 medium sized potatoes
  • peel the skin and chop into bite sized pieces
  • add chopped potatoes in the boiling water and cook until 80% done
  • drain the water and keep the potatoes aside
  • heat oil in the cast iron wok
  • temper with mustard seeds and fennel seeds
  • add red chilli and curry leaves
  • saute for few seconds
  • add thinly sliced onion and crushed garlic and saute well until it turns translucent
  • add ginger garlic paste and saute well until the raw smell goes
  • add chopped tomato, turmeric powder, red chilli powder, coriander powder, kashmiri red chilli powder and salt
  • saute well for 2-3 minutes or until the raw smell of spices goes
  • add 1/2 cup water, mix well, cover and cook the masala in low medium flame for 7 minutes
  • add cooked potatoes
  • gently mix well, cover and cook again in medium flame for 10 minutes until the potatoes cooked thoroughly 
  • serve with curd rice, sambar rice, pulao or chapathi

  • adjust spice level according to the taste
  • you can also cook potatoes in the pressure cooker for 1-2 whistle
  • adding kashmiri red chilli powder is optional

take 3 potatoes


peel the skin and chop in to bite sized pieces


add potatoes into the boiling water 


cook until 80% done


drain the water and keep the potatoes aside


heat oil the cast iron wok, temper with mustard seeds and fennel seeds


add red chilli and curry leaves, saute for few seconds


add thinly sliced onion and crushed garlic


saute well until onion turns transparent


add ginger garlic paste


saute well until the raw smell goes


add chopped tomato, turmeric powder, red chilli powder, kashmiri red chilli powder, coriander powder and salt


mix well and cook the spices until the raw smell goes


add water


cover and cook the masala for 5-7 minutes


masala is ready


add cooked potatoes


mix well and cook again in low flame for 10 minutes
