Green chilli chicken is one of the Hyderabad’s signature dish. Andhra style Green chilli chicken is a dry chicken recipe that is spiced mainly with green chillies and it also appears green in colour. Green chilli and onion paste are used in this recipe, which is the main ingredients that gives a unique flavor and taste to this dish. RECIPE FOR ANDHRA CHILLI CHICKEN

INGREDIENTS
For Marinate
- 1/2 kg chicken – cut into small pieces
- 1 tsp ghee
- 2 medium sized onion – pureed
- 1 tsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/2 tsp coriander powder
- 1/2 tsp garam masala powder
- salt to taste
To Grind
- 1/2 cup coriander leaves
- 3 green chilli – spicy variety
For Chilli Chicken
- 1 tbsp oil
- 1/4 tsp cumin seeds
- 1 spring curry leaves
- 2 green chilli – slit

PROCEDURE
- in a mixer grinder, add coriander leaves and green chilli
- add little water and grind to a smooth paste, set aside
- take 2 roughly chopped onion in a mixer grinder and grind to a smooth paste, onion paste is ready
- in a mixing bowl, add freshly cleaned chicken pieces along with ginger garlic paste, turmeric powder, red chilli powder, coriander powder, garam masala powder, salt, onion paste and ground coriander chilli paste
- mix well and place the bowl in the refrigerator for 15-20 minutes
- heat oil in a cast iron wok
- temper with cumin seeds, curry leaves and slit green chilli
- saute for few seconds
- add marinated chicken pieces and mix well with the tempered ingredients
- cover and cook on medium flame for 5-7 minutes
- once chicken cooked thoroughly, open the lid and cook on high flame for another 2-3 minutes
- switch off the flame and serve as a starter or serve with rice

NOTES
- adjust green chillies as per your taste
- if you have enough time, soak chicken in butter milk for 10-12 hours
- you can also bake this chilli chicken in 350 degree Fahrenheit for 30-40 minutes

add roughly chopped onion in mixer jar
grind to a smooth paste
in a mixing bowl, add ginger garlic paste, turmeric powder, red chilli powder, coriander powder, garam masala powder and salt
add onion paste and coriander chilli paste
mix well and rest the bowl for 20 minutes
heat oil in a wok, temper with cumin seeds
add curry leaves and slit green chillies, saute for few seconds
add marinated chicken pieces
mix well
cover and cook on medium flame for 5-7 minutes
chicken cooked thoroughly
open the lid and cook on high flame for 2 minutes
serve hot with rice
