MASALA BUN RECIPE | STARTUP COOKING
Masala Buns are super soft, delicious and flavorful snack in South India. It is also known as khara bun or spicy bun. You can find these khara buns at local Bakery stores in all across South India or in all Iyengar Bakery stores. These masala buns are very easy and simple to bake at home.
Masala buns are made with all purpose flour, yeast, onion, green chilli, red chilli flakes, coriander leaves and garlic. This snack is great to have with a cup of tea or coffee on cold weather. It tastes so delicious and very flavorful in every bite, because of curry leaves and dried oregano. You can bake these buns very easily at home and customize as you like.

INGREDIENTS
For Onion Mix
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 spring curry leaves – finely chopped
- 2 green chillies – finely chopped
- 3 tbsp garlic – finely chopped
- 1 large onion – finely chopped
- 2 tbsp coriander leaves – finely chopped
- salt – to taste
For Dough
- 1/2 cup warm milk
- 1/2 cup warm water
- 2 tsp sugar
- 1.5 tsp dry yeast
- salt – to taste
- 3 cup all purpose flour
For Topping
- 2 tbsp milk
- 2 tbsp oil
- 1/2 tsp red chilli flakes
- 1/2 tsp dried oregano
- pinch of salt
PROCEDURE
- heat oil in a pan, temper with cumin seeds and fennel seeds
- add finely chopped curry leaves, green chillies, garlic, onion and salt
- mix well and saute for few minutes or until it turns slightly caramelized
- add finely chopped coriander leaves and saute for 30 seconds and then switch off the flame
- in a mixing bowl, add warm milk, water, sugar and dry yeast
- mix well and rest the bowl for 5-10 minutes or until the yeast activates
- once yeast activated well, add all purpose flour and salt
- mix well and make a rough dough
- add sauteed onion mixture and mix well and make sure everything is well combined
- continue to knead the dough for another 5 minutes and the dough should be smooth and soft (sometimes the dough will be slightly sticky, that’s OK)
- cover and rest the bowl in warm place for 2 hours or until it double in volume
- after 2 hours, take the dough out and punch well
- place the dough onto a lightly floured surface and knead briefly for few seconds
- divide the dough into 8 equal sized pieces and gently roll the dough in to small balls
- place the prepared balls in the baking pan (spread with wax paper)
- in another small mixing bowl, mix milk, oil, red chilli flakes, oregano and salt
- gently brush the dough with milk mix and rest the balls in warm place for another 30 minutes to rise
- pre heat oven at 350 degree F and bake for 25-30 minutes or until the bun turns golden brown on top
- remove the buns from the oven and brush with unsalted melted butter while its hot and then cool down completely on cooling rack
- Enjoy masala bun as evening snack or for morning breakfast with a cup of tea or coffee
NOTES
- always chop the onions very finely
- also, use warm water only to activate the yeast
- rest the dough minimum for 2 hours to double the size
- you can replace milk wash with egg wash for browning

Masala Bun With Step By Step Photo Recipe
heat oil in a pan, temper with cumin seeds and fennel seeds
add finely chopped onion, curry leaves, green chillies and garlic
saute well for 5-6 minutes
add chopped coriander leaves
saute for 30 seconds and then switch off the flame
in a mixing bowl, add warm milk, water, sugar and yeast
rest the bowl for 5-10 minutes
yeast activates
add all purpose flour and salt
mix well and make a rough dough
add sauteed onion mix
mix well and make sure everything is well combined,
knead the dough for another 5 minutes
cover the bowl with plastic wrap and place the bowl in
warm place for 2 hours
now the dough is double in volume
punch well
place the dough in slightly floured surface and knead the dough well for another 5 minutes
divide the dough into 8 equal pieces
tightly roll the dough into a ball and place the tray in warm place to rise for another 30 minutes
in another mixing bowl, mix milk, oil, red chilli flakes,
salt and dried oregano
gently brush on top of the balls
pre heat oven at 350 degree F and bake for 25-30 minutes
brush unsalted melted butter on top of the buns
cool the buns on cooling rack
enjoy with a cup of tea or coffee
