A hot cross bun is a spiced sweet bun made with raisins, marked with a cross on the top and traditionally eaten on Good Friday in all over the world. RECIPE FOR HOT CROSS BUN

INGREDIENTS
  • 1/2 cup raisins + 1 cup boiling water
  • 3/4 cup very warm milk, divided into 1/2 cup and 1/4 cup 
  • 1/2 cup white sugar + 1/2 tsp sugar
  • 1/4 cup unsalted butter, softened at room temperature
  • 1/2 tsp salt
  • 1 envelope active dry yeast - I used Red Star Yeast
  • 2 large eggs
  • 31/2 cup all purpose flour
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • For the Egg Wash: 1 egg, well beaten with 1 tsp water
  • For the Glaze : 1/2 cup powdered sugar mixed with 21/2 tsp milk
PROCEDURE
  • add raisins in a small bowl with 1 cup hot boiling water
  • let sit for 10 minutes and then drain well and set aside
  • in a large measuring cup, combine 1/4 cup warm milk with 1/2 tsp sugar and 1 envelope active dry yeast
  • mix well and let sit at room temperature for 10 minutes or  until bubbly and doubled in volume
  • in a large mixing bowl, add warm 1/2 cup warm milk with 1/2 cup sugar, 1/4 cup softened butter and 1/2 tsp salt.
  • mix well until butter is melted
  • then, add egg, yeast mixture, ground cinnamon and nutmeg
  • finally add all purpose flour 
  • use the dough hook attachment, knead the dough until smooth and elastic. 
  • add drained raisins and mix well
  • transfer this dough mixture into large buttered bowl
  • cover and let it sit in a warm room temperature for 1 1/2 hours or until doubled in volume
  • once dough doubled in size, take dough out and place it in a lightly floured surface
  • cut the dough in to 8 equal sized pieces
  • roll dough into balls
  • place the balls in the baking pan (spread with wax paper)
  • cover with kitchen towel and let them sit in a room temperature for 30 minutes. The size of the ball will increase.
  • brush the tops with egg wash
  • preheat oven to 375 degree F and bake for 16 minutes or until golden brown
  • remove from oven and cool down completely
  • for the glaze: mix powdered sugar with 21/2 tsp milk
  • transfer glaze to a Ziploc bag, cut the tip of the bag and pipe a cross shape over each of the buns.
  • serve warm at room temperature with tea or coffee.

take raisins in a small bowl


add hot boiling water and sit for 10 minutes


drain the water and keep it aside


take warm milk in a large measuring cup


add 1/2 tsp sugar


add 1 envelope active dry yeast


mix well


let sit at room temperature for 10 minutes


see the bubbles


doubled in volume


i used this red star active dry yeast


take 1/2 cup warm milk in a large mixing bowl and add 1/2 cup sugar


add softened butter


add 1/2 tsp salt


mix well until butter is melted


add 2 egg


add yeast mixture


add ground cinnamon and nutmeg powder


add 3 1/2 cup all purpose flour


use dough hook attachment


knead the dough until soft, smooth and elastic


add drained raisins


mix well


transfer dough into large buttered bowl


cover and sit at warm room temperature for 1 1/2 hours or until doubled in volume

transfer dough into lightly floured surface


roll the dough


cut into 8 equal pieces


roll dough into balls


cover with kitchen towel and let it sit for 30 minutes


dough will puffed up


take 1 egg in a small mixing bowl


add 1 tsp water


whisk well


brush the tops with egg wash



preheat oven at 375 degree F and bake for 16 minutes


cool down completely



for the glaze, take 1/2 cup powdered sugar in a mixing bowl


add 21/2 tsp milk


mix well


transfer glaze to a ziploc bag and cut off the tip of the bag


pipe a cross shape over each of the buns
