Instant Nei Appam is traditional sweet appam made without soaking and grinding. Nei Appam is one of the most important dish usually served as prasadam on the auspicious occasion of Gokulashtami.

Nei appam is most popular in the states of Tamil Nadu and Kerala. The outer layer of nei appam is very crispy and the inner is very soft and delicious. This instant nei appam is made with idiyappam flour, wheat flour, sooji, jaggery, cardamom powder and salt. Just i added grated coconut for extra flavor and you can also replace with ripe banana for even more soft appam. 

This recipe is very easy to make unlike traditional appams. Make this appam for karthigai deepam, christmas, diwali, janmashtami, etc., Also, you can serve for breakfast, evening snack and kids lunch box too. Follow my step by step photo recipe to prepare Instant Nei Appam.     INGREDIENTS

    • 1/2 cup idiyappam flour
    • 1/2 cup rava
    • 1/4 cup wheat flour
    • 3/4 cup jaggery – powdered
    • 1/3 cup water
    • 1/4 tsp cardamom powder
    • 1/4 tsp baking soda
    • 2 tbsp grated coconut
    • pinch of salt
    • ghee – as needed

    PROCEDURE

    • bring water to boil in a sauce pan
    • add powdered jaggery and mix well
    • boil for 1-2 minute and then switch off the flame
    • strain the jaggery syrup using strainer to remove impurities and then set aside
    • in a mixing bowl, add idiyappam flour, rava, wheat flour, cardamom powder, grated coconut and salt
    • mix well
    • now add strainer jaggery syrup and baking soda, mix well without any lumps
    • add water little by little and adjust the consistency of the batter (the batter should be slightly pouring consistency like a dosa batter)
    • heat paniyaram pan, add 1/2 tsp ghee in each mould and then add a ladle full of batter in each mould
    • cover and cook for 2-3 minutes in low medium flame until it turns dark brown and then flip over to other side and cook evenly 
    • once paniyaram cooked well, remove from the pan and serve hot for breakfast or for tea time snack
    • continue the same process with the remaining batter

    NOTES

    • if you hesitate to fry fully with ghee, add sesame oil and reduce the amount of ghee and then fry in the pan
    • try to use coarse rava for better results
    • for crunchy bite, replace grated coconut with small coconut pieces

    add jaggery and water into the bowl

    melt the jaggery and boil for 1 minute and then switch off the flame

    in a mixing bowl, add idiyappam flour, rava, wheat flour, salt, baking soda and cardamom powder

    mix well

    strain the jaggery syrup using strainer

    mix well

    add grated coconut

    add 1/4 cup water and adjust the consistency of the batter, the consistency of the batter should be thick dosa batter

    mix well

    add 1/2 tsp ghee in each mould

    fill the mould with batter, cover and cook in

     medium flame for 2 minutes

    once the edges turn brown color, flip over to other 

    side and cook evenly
