Makhanas also called as fox nuts or lotus seeds, come from a plant called Euryale Fox which grows in the stagnant water of wetlands or ponds in Eastern Asia. They have been used in Chinese medicine since 3000 years and find an important place in the science of Ayurveda too.

Makhana has been the primary offering to goddesses during festivals in the Mithila region, which includes Bihar and Nepal, for centuries. During these festivals, the makhana is either made into non-flower garlands or roasted into edible form to be offered to deities as a form of devotion.

Fox nuts (makhana) is a great snack option. It's an ideal substitute for popcorn to keep the hunger pangs away. In some parts of India, it is considered auspicious and is offered to gods on special occasions and festivals.

Lotus seeds (Makhana) are actually tasteless. For spicy roasted makhana, roast the seeds with a little ghee on a low flame, sprinkle turmeric powder, red chilli powder, chaat masala and salt, yummy snack is good to go. Makhana also be used in sweet dishes like kheer and other desserts.

RECIPE FOR SPICY ROASTED MAKHANA

INGREDIENTS

  • 2 tsp ghee
  • 1.5 cup makhana / foxnuts / lotus seed
  • 1 tsp ghee
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/4 tsp chat masala powder
  • pinch of salt

PROCEDURE

  • heat ghee in a pan, add 1 cup of makhana and roast them on very low flame for 5 minutes or until they are crisp (it should break easily if you press between your fingers and hears a crunchy sound)
  • remove the roasted makhana from the flame and set aside
  • again heat ghee in the same pan, add turmeric powder, red chilli powder, chaat masala powder and salt
  • mix well and saute for 1 minute in very low flame (do not burn the spices)
  • now add roasted makhana and toss well
  • cook in very low flame for another 2 minutes and then switch off the flame (make sure the spices are well coated with the roasted makhana)
  • cool down completely and then store in an air tight container
  • serve with a cup of tea or coffee

NOTES
  • adjust spice level according to your taste
  • cook the whole process in very low flame
  • if you are vegan, replace ghee with coconut oil and cook

Spicy Roasted Phool Makhana With 

Step By Step Photo Recipe


heat ghee in a pan


add phool makhana


roast in low flame for 5-7 minutes or until it turns crisp


roasted makhana is ready and set aside


in the same pan, add 1 tbsp ghee, add turmeric powder, red chilli powder, chaat masala and salt


mix well and saute for 1 minute


add roasted makhana


mix well and cook in low flame for 2 minutes and
 then switch off the flame

serve with a cup of tea or coffee
