Ingredients

  • 2 tbsp oil

  • 1/2 tsp cumin seeds

  • 1 large onion – thinly sliced

  • 1 tbsp ginger garlic paste

  • 1 tomato – chopped

  • 1/4 tsp turmeric powder

  • 1 tsp red chilli powder

  • 1 tsp coriander powder

  • salt – to taste

  • 1/2 cup water

  • 1 cup paneer cubes

  • 1 yellow bell pepper

  • 1 red bell pepper

  • 1 tbsp lemon juice

  • 1/4 cup coriander leaves

  • 2 tbsp kasoori methi

  • 1 tsp garam masala

Directions

  • heat oil in a heavy bottomed pan, temper with cumin seeds and then add thinly sliced onion and cook for 4-5 minutes or until they are softened and translucent
  • add ginger garlic paste and cook for a minute until aromatic
  • add chopped tomato, turmeric powder, red chilli powder, coriander powder, garam masala powder and salt
  • mix well and cook this mixture for 3-4 minutes or until the raw smell of spices goes away
  • add thinly sliced bell peppers and cubed paneer, cook for 3-5 minutes until softened but still with some bite
  • serve garnish with kasooti methi, lemon juice and chopped coriander leaves
  • mix well to combine and serve with parathas or naan

Notes

  • this recipe is great to use up leftover protein and veggies for a quick weeknight meal
  • to make jalfrezi vegan, substitute paneer with extra firm cubed tofu
  • store leftover paneer jalfrezi in an airtight container in the fridge for up to 4 days. reheat in the microwave for a couple of minutes or in a skillet over medium low heat until warmed through
