RECIPE FOR BRINJAL CHUTNEY

INGREDIENTS

  • 1 medium size brinjal
  • 2 red chilli
  • 1 inch ginger
  • 1 garlic
  • small piece of tamarind
  • 1 tsp urad dal
  • 1 tsp bengal gram dal
  • 1/4 tsp turmeric powder
  • salt as needed
  • sesame oil 2 tsp
  • 1/4 tsp mustard seeds
  • 1/2 tsp urad dal
  • pinch of hing | asafoetida
  • 5 curry leaves

PROCEDURE

  • soak tamarind in hot water
  • wash and wipe the brinjal using paper towel
  • apply a little oil on brinjal
  • heat it on direct flame or until the skin becomes shrink
  • allow to cool completely
  • peel the skin and discard it
  • chop the brinjal into small pieces and keep it aside
  • heat a tsp of oil, add urad dal, bengal gram dal, ginger and red chillies
  • fry for a while or until dal color changes
  • transfer into mixer grinder
  • add chopped brinjal, garlic and turmeric powder
  • saute for 1 minute
  • add into mixer grinder
  • add tamarind and salt
  • grind to a smooth paste by adding little water
  • heat a tsp of oil, add mustard seeds, urad dal, hing and curry leaves
  • add into brinjal chutney
  • mix well
  • serve with Idli and Dosa
  • Tastes Great.

Brinjal Chutney with Step-By-Step Photo Recipe

soak tamarind in hot water

take 1 medium size brinjal, wash and wipe with paper towel. apply oil on brinjal

heat brinjal on direct flame

brinjal shrink like this

start peel the skin

remove skin completely and discard the skin. chop into small pieces

heat sesame oil in a pan

add urad dal, bengal gram dal, ginger and red chillies

fry in a medium flame till the dal color changes

transfer into mixer grinder

in the same pan, add chopped brinjal

add turmeric powder

fry for 1-2 minute in medium flame

transfer into mixer grinder

add soaked tamarind and salt

grind to a coarse paste

add little amount of water

grind to a  smooth paste

for seasoning, heat oil in a pan, add mustard seeds, urad dal, hing and curry leaves

add into brinjal chutney, serve with Idli and Dosa
