Mint Coriander rice can be prepared under 30 minutes.  This recipe is perfect for lunch boxes and its a great choice for fussy kids who don’t eat greens. This rice goes well with raita and papad. This is one of the easy recipe, which is perfect for special occasions, festivals, pot lucks or any get-together.

    INGREDIENTS

    • 1 cup basmati rice
    • fistful of mint leaves
    • fistful of coriander leaves
    • 5 garlic
    • 1 inch ginger
    • 3 green chilli
    • 1/4 cup grated coconut
    • 2 tbsp ghee
    • 3 cloves
    • 1 inch cinnamon stick
    • 1 bay leaf
    • 1/8 tsp cardamom powder
    • 1 onion – thinly sliced
    • 1 tomato – chopped
    • 1/4 tsp turmeric powder
    • 1 tsp red chilli powder
    • salt as needed
    • 2 cup water

    PROCEDURE

    • soak basmati rice in water for 30 minutes
    • in a mixer grinder, add mint leaves, coriander leaves, garlic, ginger, green chilli and grated coconut
    • grind to a smooth paste by adding little water and keep it aside
    • heat ghee in a pressure cooker
    • temper with cloves, cinnamon stick, bay leaf and cardamom powder
    • saute for few seconds
    • add thinly sliced onion and saute well until it turns transparent
    • add chopped tomato and saute well until it turns mushy
    • add grounded masala paste, mix well and saute for 3-4 minutes
    • add turmeric powder, red chilli powder and salt
    • mix well and again saute for 1-2 minutes until the raw smell of spices goes
    • add soaked basmati rice
    • mix well and cook for 1 minute
    • now add 2 cup water and mix well
    • pressure cook for 3 whistle on medium flame
    • serve hot with onion raitha

    NOTES

    • adjust spice level according to your taste
    • here i used basmati rice, if you dont have, you can replace with regular sona masoori rice

    Mint Coriander Rice with Step-By-Step Photo Recipe

    wash and soak basmati rice in water for 30 minutes

    take all the ingredients together, mint leaves, coriander leaves, garlic, ginger, green chilli and grated coconut

    add all the ingredients in the mixer grinder

    grind to a smooth paste by adding little water and set aside

    heat ghee in a pressure cooker pan

    add cloves, cinnamon stick, bay leaf and cardamom powder, 

    saute well

    add thinly sliced onion

    saute well until onion turn translucent

    add chopped tomato and saute well till it turn mushy

    add grounded masala paste

    mix well and saute for 3-4 minutes

    add turmeric powder, red chilli powder and salt

    mix well and saute for 1-2 minute

    add soaked basmati rice

    combine well with all the spices and saute for 1 minute

    add water and mix well

    pressure cook for 3 whistle and then switch off the flame
