UDUPI SAMBAR | NO ONION NO GARLIC SAMBAR | STARTUP COOKING
Udupi Sambar is a very delicious South Indian recipe which is prepared with veggies and freshly ground spices. This sambar is very special, which belongs to Udupi (a city in Karnataka).
Sambar is a very popular recipe in South India and one can’t imagine without this dish in any cuisine. This recipe is a part of Udupi cuisine and can be found in every restaurant in the city.
Udupi sambar has no onion, no garlic and no tomato, tangy flavor from tamarind extract is heavenly delicious and woo your taste buds. This sambar goes well with Idli, Dosa, Pongal and steamed rice. Freshly roasted coconut gives an extra ordinary flavor.

RECIPE FOR UDUPI SAMBAR
Coarse : Side Dish for Idli, Dosa and Rice

INGREDIENTS
To Roast and Grind
- 1 tsp oil
- 1 tbsp coriander seeds
- 1.5 tsp Urad Dal
- 1 tsp bengal gram dal
- 1/2 tsp fenugreek seeds
- 1/4 tsp hing
- 1 spring curry leaves
- 1/4 cup grated coconut
- 6-8 Byadgi red chilli
- water to grind
To Pressure Cook
- 3/4 cup toor dal
- 1/4 tsp turmeric powder
To Temper
- 2 tbsp oil
- 1/4 tsp mustard seeds
- 1/2 tsp urad dal
- 1/2 tsp cumin seeds
- 1/4 tsp fenugreek seeds
- 1/4 tsp hing
- 1 red chilli
- 1 spring curry leaves
- 1/3 cup chopped vegetables (your choice – can use carrot, beans, brinjal, yam, pumpkin, etc.,)
- gooseberry sized tamarind – soak in water
- 1/8 tsp turmeric powder
- salt to taste
- 1 tsp jaggery
- 1 tbsp ghee
- handful of coriander leaves – to garnish
PROCEDURE
- add a tsp of oil in a pan, fry coriander seeds, Urad Dal, bengal gram dal and fenugreek seeds
- fry for few minutes in low flame
- add curry leaves, hing, red chili and grated coconut
- roast well and then switch off the flame
- cool down completely
- add in to mixer grinder
- grind to a smooth paste adding little water and keep it aside
- pressure cook toor dal with turmeric powder for 3-4 whistle
- mash the dal with spoon or with hand blender and keep it aside
- if using hand blender, sambar will be creamy texture and taste delicious than mash with spoon
- soak tamarind in water and extract the juice
- heat 2 tbsp oil in a pan
- add mustard seeds and allow to crackle, then add Urad Dal, cumin seeds, fenugreek seeds, hing, red chili and curry leaves
- saute for few seconds or till the nice aroma comes
- add chopped vegetables and saute for 1 minute
- add tamarind extract and ground paste
- mix well
- cover and cook in low medium flame for 5-10 minutes or until the vegetables cooked thoroughly
- add cooked dal and salt
- mix well
- bring sambar to boil well for 5 minutes
- add jaggery and cook for 1 minute
- garnish with coriander leaves and ghee
- Udupi Sambar Ready
- serve hot with Idli, Dosa or Rice

NOTE
- if you like add sambar powder, after adding tamarind water
- add more jaggery if you like sweet sambar
- adding more vegetables gives more taste to this sambar
- don’t add onion, garlic and tomato
Udupi Sambar with Step-By-Step Photo Recipe
add a tsp of oil in a pan
add coriander seeds, Urad Dal, bengal gram dal and fenugreek seeds
fry for few minutes in low flame
add red chili, hing, curry leaves and grated coconut
mix and roast well in low medium flame, switch off and cool down completely and then grind to a smooth paste (forgot to take the picture)
soak tamarind in water and extract the juice
pressure cook toor dal for 3-4 whistle
cooked dal
mash well using spoon or hand blender
heat oil in a pan, crackle mustard seeds, Urad Dal, cumin seeds and fenugreek seeds
add hing, red chilli and curry leaves, saute for few seconds
add chopped vegetables
saute for few minutes
add tamarind water
add roasted and grounded paste
mix well
cover and cook in low medium flame for 5 minutes or till the veggies cooked completely
add mashed toor dal
add salt
mix well
boil the sambar well for 5 minutes
add jaggery powder and cook for 1 minute
garnish with coriander leaves
add ghee
mix well and switch off the flame
