I used to think papaya salad always had to be made with hard, green fruit. But one day, I tried it with a ripe, orange papaya instead, and I was shocked by how good it was! It’s much sweeter and softer than the traditional version, making it the perfect refreshing treat for a warm day.

The best part about this salad is the mix of flavors. The papaya is naturally sweet, but when you add a little lime juice and salt, it becomes a delicious savory snack. It’s a great way to eat fruit in a way that feels more like a real meal.

Since the fruit is soft, you really need something crunchy to make it fun to eat. That’s where the peanuts come in! I love adding a big handful of roasted peanuts on top. The salty crunch of the nuts against the smooth fruit is the perfect match.

This is probably the easiest recipe on my blog. There is no cooking at all – you just peel the fruit chop it up, and toss it with the dressing. You can have a beautiful, healthy dish ready in about five minutes. It’s perfect for when you’re busy but still want to eat something fresh.

Ingredients

  • 1 papaya – cubed

  • 1 cucumber – cubed

  • 1 tomato – cubed or cherry tomato

  • 1/4 onion – finely chopped

  • 2 tbsp mint leaves – chopped

  • 2 tbsp coriander leaves – chopped

  • 2-3 tbsp roasted peanuts – skin removed

  • Dressing
  • 1 small lemon – juice

  • 1 tsp soy sauce

  • 1/2 tsp ginger – grated

  • 1/2 tsp honey

  • salt – to taste

  • 1/4 tsp black pepper powder

  • 1/4 tsp red chilli flakes

Directions

  • peel the papaya, remove seeds and cut into cubes or slices
  • combine the papaya, cucumber, tomatoes, onion, mint leaves, coriander leaves and roasted peanuts in a large bowl
  • in a small bowl, mix lime juice, soy sauce, grated ginger, honey, salt, black pepper powder and red chilli flakes
  • pour the dressing over the fruit and toss very lightly to ensure the papaya stays intact.
  • chill for a few minutes before serving as a light snack or side dish.

Notes

  • pick a papaya that is fully orange/yellow but still feels fir when pressed. If it’s too soft (mushy), the salad will turn into a fruit puree when you toss it.
  • never dress the salad in advance. ripe papaya is delicate and watery; it it sits in the dressing, it will get soggy. pour and toss seconds before it hits the table.
  • ripe papaya is very sweet. to make it a salad rather than a dessert, be generous with the lime juice and add a pinch of flaky sea salt to make the tropical flavors pop.
