POTATO CUTLET RECIPE | ALOO TIKKI | STARTUP COOKING

Potato cutlets are another mouth watering wonderful snack recipe made from potato. If you have unexpected guest and you want to make something good and tasty, these are always come in mind, because they are quick and easy to make and also a great snack for parties and evening snack with tea and coffee in just 25 minutes. Crispy and delicious aloo tikki is one of the most popular North Indian street food.

Potato cutlets are made with mashed potatoes and spices and then shaping them into patties, and then shallow fried in hot oil. These cutlets are soft in the center and crunchy from outside. Cutlets are served with tomato ketchup, coriander and mint chutney.

RECIPE FOR ALOO TIKKI

INGREDIENTS

  • 3 boiled potato 
  • 1 tsp cumin powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 2 green chilli – finely chopped
  • 1/3 cup coriander leaves – finely chopped
  • salt to taste
  • 1.5 tbsp corn flour
  • 1/4 cup all purpose flour
  • water as needed
  • bread crumbs as needed
  • 1/4 cup oil – for shallow fry

PROCEDURE

  • take 3 boiled potatoes in a mixing bowl
  • mash the potatoes well with a fork without any lumps
  • add red chilli powder, coriander powder, cumin powder, garam masala, salt, chopped green chillies and coriander leaves
  • mix well
  • add corn flour and combine altogether and make like a dough
  • pinch a ball sized dough from the bowl and make a ball
  • gently press the ball and slightly flatten it like a cutlet shape
  • in a small bowl, add all purpose flour and little water, make a fine paste and the batter should be thick flowing consistency
  • spread bread crumbs in another plate
  • dip the cutlet in all purpose flour mixture and then coat well in bread crumbs
  • repeat the same process with the remaining dough
  • place the prepared cutlets in the refrigerator for 15 minutes to make it firm
  • heat oil in a pan
  • place the prepared cutlets in the hot oil and shallow fry on low medium flame until crispy texture and golden brown on one side
  • flip over the cutlets to other side and cook evenly until it turns golden brown
  • remove from the oil and serve hot with tomato ketchup 
  • serve as an evening snack or an appetizer

NOTES

  • adjust spice level according to your taste
  • if you dont have corn flour, replace with besan flour or rice flour, works good
  • add panko bread crumbs if you need more crispiness

Potato Cutlet (Aloo Tikki) with Step By Step Photo Recipe

take 3 boiled potatoes

mash well with a fork

add red chilli powder, coriander powder, cumin powder, garam masala powder, salt, green chilli and coriander leaves

mix well

add corn flour

mix well and make like a dough

pinch a ball sized dough, make a ball and slightly flatten 

it like a cutlet shape

mix all purpose flour and water in a bowl, whisk well without any lumps.  dip the cutlet in the all purpose flour mix and coat well 

on both the sides

now coat on bread crumbs

continue the same process with the remaining dough, 

place in refrigerator for 15 minutes to make it firm

heat oil in a pan, place the prepared cutlets and shallow 

fry on medium flame until it turns crisp and golden brown

flip over to other side and cook evenly until it turns crisp 

and golden brown

potato cutlet is ready and serve hot with ketchup
