Mayonnaise sandwich

Vegetable Mayonnaise Sandwich is super quick and easy sandwich recipe and is a staple breakfast on weekends in my home. This Sandwich is loaded with mayonnaise and lots of vegetables and it can be a perfect breakfast or evening snack. 

This is a very tasty and delicious snack that can be made in less than 20 minutes,  just need a bit of fine chopping! Here I used onion, carrot, sweet corn and capsicum, but you can replace with boiled peas, sautéed mushrooms, shredded cabbage etc., and also you can add boiled eggs and shredded chicken instead of veggies.

Bread - you can use any bread, white bread, milk bread, wheat bread, or multigrain bread etc., I always recommend to toast the bread for sandwiches to prevent from sogginess.

You can also pack this tasty and healthy veg mayo sandwich for kids lunchbox. RECIPE FOR MAYONNAISE SANDWICH

Mayonnaise sandwich

INGREDIENTS

  • 6 bread slices - brown or white bread
  • 2 tbsp unsalted butter
  • 4 tbsp mayonnaise
  • 1/4 cup lemon juice
  • salt to taste
  • 1/4 tsp black pepper
  • 2 tsp red chilli flakes
  • 1 garlic clove - minced
  • 3 tbsp onion - finely chopped
  • 1 green chili - chopped
  • 3 tbsp carrot - grated
  • 3 tbsp sweet corn - boiled
  • 1/4 cup capsicum - finely chopped
  • 3 tbsp coriander leaves - chopped

PROCEDURE

  • in a mixing bowl, add mayonnaise, lemon juice, salt, black pepper powder, red chili flakes and minced garlic
  • mix well
  • then add veggies, finely chopped onion, capsicum, green chilli, coriander leaves, grated carrot and boiled corn
  • mix well, add more spice if needed
  • heat a tbsp of unsalted butter in a pan or tawa
  • toast the bread slices on both the sides until light brown and crisp, it prevents the sandwich from soggy
  • spread prepared filling over one toasted bread slice and cover with another toasted bread
  • cut into triangle and serve hot
  • Enjoy!


NOTES

  1. use vegetables of your choice, I used onion, carrot, capsicum and corn, but you can replace with boiled peas, sautéed mushrooms, shredded cabbage etc.,
  2. you can add boiled eggs and shredded chicken instead of the veggies.
  3. add more red chili flakes if needed
  4. use brown bread in place of white bread for healthy version

mix well


add chopped onion, capsicum and grated carrot

add boiled corn and chopped coriander leaves


mix well


heat a tbsp of unsalted butter


place the bread slice and toast the bread


toast on both the sides until it turns slight brown and crisp


spread mayonnaise filling


cover with another toasted bread


cut into triangle and serve hot
