Vegetable Puff is an Indian appetizer or snack recipe that is popularly sold in many bakeries in India. It is basically a flaky pastry filled with some kind of savory filling, it may be vegetables, chicken, egg or only with potato filling and then baked until crispy and golden brown. These crispy, flaky savory pastries are usually relished with a cup of hot tea or coffee in the evening. 

I have used the store brought frozen puff pastry sheets because it is less time consuming. Before using the frozen puff pastry sheets thaw it as per the package instructions. Don't leave the sheets outside for too long then it becomes too soft and it will be difficult to handle. You can also use homemade pastry sheets for this yummy snack.

The recipe for veggie puff is really easy and the best part about this recipe is you can make these preparations ahead of time and either refrigerate or freeze them. Just bake and serve for big parties or sudden guests.

RECIPE FOR VEGETABLE PUFF

INGREDIENTS

  • 1 ready made puff pastry sheet
  • 2 tsp oil
  • 1 tsp cumin seeds
  • 1 onion - finely chopped
  • 1 tsp ginger garlic paste
  • 1 small tomato - finely chopped
  • 1/3 cup carrot - chopped
  • 1/2 cup beans - chopped
  • 1/3 cup peas
  • 1 large potato - boiled
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp dry mango powder
  • salt - to taste
  • 3 tbsp coriander leaves - chopped

PROCEDURE

  • heat oil in a pan and temper with cumin seeds
  • add finely chopped onion and saute well until it turns translucent
  • add chopped veggies with a pinch of salt
  • saute well until the vegetables turn little soft, it will take around 4-5 minutes in medium flame
  • now add boiled potatoes and mix well with the veggies and cook for a minute
  • then add turmeric powder, red chilli powder, coriander powder, garam masala powder, dry mango powder and salt
  • mix well and cook for a minute and then switch off the flame
  • masala stuffing is ready 
  • now for the puff pastry, thaw the pastry sheet at room temperature and then cut into 4 inch squares
  • fill 2 tbsp prepared filling in the centre of the square and gently fold into desired shape like square or a triangle and seal the edges with fork, gently moisten the edges with little water
  • place all the prepared puffs on the baking tray lined with aluminum foil or parchment paper 
  • pre heat oven at 425 degree F and bake for 20-25 minutes or until the top surface turns golden brown and crispy texture
  • once done, remove the vegetable puff from the oven and place it on the cooling rack and let it cool down for 10 minutes
  • serve these delicious puff with tomato ketchup or with a cup of tea or coffee

NOTES
  • add vegetables of your choice
  • adjust spice level according to your taste
  • you can also steam all the veggies in the steamer instead of sautéed or boiling
  • follow the instructions carefully before use the pastry sheet
