Prawn fried rice / shrimp fried rice is one of the most popular fried rice recipe in chinese restaurants. This recipe for prawn fried rice comes from my dear friend Janani. She learned how to make the best prawn fried rice from her mother, residing in china. This recipe is super easy and ready in less than half an hour. 

For this prawn fried rice recipe i used medium sized prawn. If you have leftover rice in the fridge, a great way to use it up is to make fried rice! Fried rice works best with chilled left over rice actually. Fresh rice can fry up a bit mushy. But leftover rice that had a chance to dry out a bit? Perfect for frying. 

Tips to make perfect prawn fried rice

  1. use cooled or chilled rice
  2. cook on high heat
  3. fry ingredients separately
  4. minimize stirring
  5. don't overcook the prawns

RECIPE FOR PRAWN FRIED RICE

INGREDIENTS

To Cook Rice

  • 2 cup basmati rice
  • 1 tsp oil
  • water
For Marinate Prawns
  • 1.5 cup medium size prawns
  • 1 tsp red chilli powder
  • 1 tsp lemon juice
  • 1 tsp soy sauce
  • salt to taste
For Scramble Egg
  • 1 tsp oil
  • 1 egg
  • pinch of salt
  • pinch of black pepper powder
For Fried Rice
  • 1.5 tbsp sesame oil
  • 1 tbsp garlic - chopped
  • 1.5 tsp ginger - chopped
  • 1 green chilli - chopped
  • 1 onion - finely chopped
  • 1/2 capsicum - chopped
  • salt to taste
  • 1 tsp vinegar
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 1 tsp black pepper powder
  • 1/4 cup sping onion - chopped

PROCEDURE

  • bring water to boil
  • add rice and a tsp of oil
  • cook rice in medium flame
  • once 90% of rice cooked, drain the water and keep the rice aside and cool down
  • in a mixing bowl, mix prawns, red chilli powder, lemon juice, soy sauce and salt
  • marinate for 20 minutes
  • heat a tsp of oil
  • add egg, salt and black pepper powder
  • slightly scramble the egg and set aside
  • in the same pan, add marinated prawns
  • cook for 3-4 minutes or until it is cooked and curled, then remove the prawns from the pan and set aside
  • in the same pan, add a tbsp of sesame oil
  • add chopped ginger, garlic and green chilli
  • saute for few minutes
  • add finely chopped onion
  • saute in a medium flame until it looks transparent
  • add chopped capsicum
  • saute for a minute
  • add salt, vinegar, soy sauce, sugar and black pepper powder
  • mix well
  • add cooked prawns and scrambled egg
  • toss well
  • add cooked rice and combine altogether
  • cook for 2 minutes and then switch off the flame
  • garnish with chopped spring onions
  • serve hot
  • prawn fried rice taste delicious with manchurian
NOTES
  1. cooking rice is a main key for a perfect fried rice, it should be fluffy
  2. if you have leftover rice in the fridge, a great way to use it up is to make fried rice
  3. dont over cook the prawns or else it will turn rubbery
  4. adjust spice level as per your taste

PRAWN FRIED RICE WITH STEP-BY-STEP PHOTO RECIPE



soak basmati rice in water for 30 minutes


bring water to boil, add rice and oil


once 90% of rice cooked, switch off the flame 


drain the excess water and cool down the rice


in a mixing bowl, take prawns


add salt, red chilli powder, lemon juice and soy sauce


mix well and set aside for 20 minutes


heat a tsp of oil in a non stick pan


add egg


add salt and pepper powder


scramble the egg


set aside


in the same pan, add a tsp of oil


add marinated prawns


cook for 3-4 minutes until it is cooked and curled


set aside


heat sesame oil in the same pan


add chopped garlic, ginger and green chilli


saute for few minutes


add finely chopped onion


saute for few minutes or until it looks transparent


add chopped capsicum


mix and saute well


add salt, vinegar, soy sauce, black pepper powder and sugar


mix well


add cooked prawns and scrambled egg


toss well


add cooked rice
