This  Prawn biryani recipe made in dum style, with basmati rice and South Indian spices. It turns out delicious and super aromatic and it can be served with curd or raitha. RECIPE FOR PRAWN BIRYANI

INGREDIENTS

To Cook Rice: 
  • 1 cup basmati rice
  • required amount of water
  • 1 tsp ghee or oil
For Marination:
  • 750 g prawn (cleaned and de-veined)
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp salt
For Fried Onion:
  • 1 medium size onion - thinly sliced
  • oil for deep fry
For Saffron Water:
  • 1/4 tsp saffron strands
  • 1/4 cup hot water
For Biryani:
  • 2 tbsp cooking oil
  • 1 tbsp ghee
  • 3 cloves
  • 1 inch cinnamon stick
  • 1 tsp black stone flower
  • 1 bay leaf
  • 1 onion - thinly sliced
  • 2 green chilli - slitted
  • 1 tbsp ginger garlic paste
  • 1 tomato
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 3 tsp coriander powder
  • 1 tsp garam masala powder
  • salt as needed
  • 1/4 cup yogurt/curd
  • 1/4 cup mint leaves
  • 1/4 cup coriander leaves 

PROCEDURE
  • wash and soak basmati rice in water for 30 minutes. Then drain the water and set aside
  • cook rice with required amount of water and a tsp of ghee
  • cook rice in medium flame, once 80% of rice cooked, drain the excess water and keep it aside
  • soak saffron in hot water and keep it aside
  • in a mixing bowl, add cleaned and de-veined prawn, add turmeric powder, red chilli powder and salt
  • mix well and allowed to rest for 30 minutes
  • heat oil in a cast iron wok, add thinly sliced onion, deep fry the onions, drain the excess oil and keep it aside
  • in the same oil, add marinated prawns
  • cook on high flame for 2-6 minutes, drain the excess oil and keep it aside
  • in the same oil, add a tbsp of ghee
  • add cloves, cinnamon stick, black stone flower and bay leaf
  • saute well
  • add thinly sliced onion and slitted green chilli
  • saute onion till it turn transparent and light golden brown
  • add ginger garlic paste
  • saute well until the raw smell goes
  • add chopped tomato, turmeric powder, red chilli powder, coriander powder, garam masala powder and salt
  • saute well till tomatoes turn mushy
  • add yogurt/curd, mint leaves and coriander leaves
  • mix well and cook for 1 minute in high flame
  • add fried prawn
  • combine well with the seasonings
  • add 80% cooked rice, saffron water and fried onion
  • cover with heavy weight cast iron tawa
  • cook in low flame for 20 minutes
  • switch off the flame and remove the cast iron tawa
  • gently mix and serve hot with raitha
  • tastes yummy

soak basmati rice in water for 30 minutes



drain the excess water and keep it aside


soak saffron strands in hot water and keep it aside

heat oil in a cast iron wok


use the same oil for prawn to fry


in the same oil, add ghee





cover with cast iron tawa or anyother heavy weight pan
cook in low flame for 20 minutes


after 20 minutes switch off the flame and remove the cast iron wok
gently mix from the bottom

serve hot with curd or raitha
