Semiya kichadi or vegetable semiya or vermicelli upma is a very easy and healthy south Indian breakfast. It is a one pot meal. Semiya kichadi is a perfect lunch box recipe also.  The main difference between upma and kichadi is that upma is bit dry and kichadi is soft and cook with vegetables and a masala flavour. This recipe goes well with coconut chutney.

INGREDIENTS


PROCEDURE
  • In a sauce pan, add 2 cups of water
  • allow to boil
  • add vermicelli 
  • add 2 tsp of oil
  • bring water to boil and cook for 3-4 minutes
  • once 3/4th cooked, filter through a strainer  and allowed to rest for 5 minutes
  • in a frying pan, add cloves, cinnamon, garlic, curry leaves, green chilli, finely chopped ginger, and cashew nuts.
  • saute for few minutes
  • add thinly sliced onions
  • saute onion until become translucent
  • add chopped tomato
  • saute until it become mushy
  • add chopped carrot, beans and peas
  • add salt and 1/2 cup water
  • cover and cook for 5 - 8 minutes or until vegetables half cooked
  • now add cooked vermicelli or semiya
  • mix well
  • cover and cook for 5 minutes in low flame
  • garnish with coriander leaves
  • Enjoy with coconut chutney or coriander chutney.
