Rabri is basically a thick, creamy residue, which is left behind after milk is evaporated. Rabri is a traditional Indian dessert and is often a part of celebrations and festivals. We can add sugar or condensed milk, I added condensed milk here, is prepared on low flame over a long period of time to get that perfect taste. It is used to serve with hot piping jalebi or on deep fried bread, its called double ka Meetha. It is generally goes well with all sweet delights. 


We can also freeze the rabri in popsicle sticks to make ice-cream or kulfi. This is one of the delightful treat for your kids. Try this delicious recipe and surprise your family and friends. RECIPE FOR RABRI / RABDI

INGREDIENTS

  • 1 litre whole milk
  • 1 cup sweetened condensed milk
  • 1 pinch of saffron strands
  • 1/2 tsp cardamom powder
  • 1 tbsp nuts (almond and pistachio) – chopped

PROCEDURE

  • add whole milk in a large pan
  • bring milk to boil
  • stir occasionally, otherwise milk will stick to the bottom of the vessel
  • once milk starts to boil well, add sweetened condensed milk
  • mix well
  • bring milk to boil
  • boil in medium flame
  • a layer of cream is formed over the milk, stick the cream to sides of the vessel
  • stir from bottom of the vessel, so that milk doesn’t burn
  • bring milk to boil again
  • repeat, collecting of cream to sides of the pan for at least 3-5 times or till milk reduces to one-third
  • soak saffron strands in 1 tbsp of milk
  • once milk reduces to one-third, add saffron milk
  • add cardamom powder
  • mix well and scrape off the collected cream from sides of the pan
  • stir well
  • bring milk to boil for 1 minute in low flame
  • consistency of the milk should be thick and flowing
  • transfer into serving bowl
  • garnish with almonds and pistachios
  • Delicious Rabri / Rabdi is ready

RABRI WITH STEP-BY-STEP PHOTO RECIPE

mix well

bring milk to boil and boil in medium flame

a layer of cream is formed over the milk, stick the cream to sides of the vessel

bring milk to boil again

repeat, collecting of cream to sides of the pan for at least 3-5 times or till milk reduces to one-third

soak saffron in 1 tbsp of milk

add saffron milk

add cardamom powder

mix well and scrape off the collected cream from sides of the pan

bring milk to boil in low flame

cook for 1 minute and switch off the flame

consistency should be thick and flowing

transfer in to serving bowl

garnish with almonds and pistachios
