Mutton chukka is a lip smacking recipe from Madurai, Tamil Nadu. My husband native place. Mutton chukka is spicy dry curry, cooked mutton with caramelized onions, ginger, garlic along with other spices, especially pepper powder. we can serve mutton chukka as a starter or with any rice, chapathi or roti too. For the best results, cook mutton chukka in a cast iron pan or wok and need lots of patience to cook for this recipe. Follow my step-by-step photo recipe to make chukka varuval. RECIPE FOR MUTTON CHUKKA VARUVAL

INGREDIENTS


To Cook Mutton:

  • 1/2 kg mutton
  • 1/4 cup onion
  • 1/2 tbsp minced garlic
  • 1 tsp minced ginger
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • salt as needed to cook mutton
  • 1/4 cup water

To Make Fry :

  • 3 tbsp sesame oil
  • 1 tsp cumin seed
  • 1 spring curry leaves
  • 3/4 cup finely chopped onion
  • 1 1/2 tbsp finely chopped garlic
  • 1 tbsp finely chopped ginger
  • 1 green chilli – chopped
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 1/2 tsp coriander powder
  • 1 tsp garam masala powder
  • cooked mutton
  • salt as needed to make fry
  • 1 tsp black pepper powder
  • one spring curry leaves 
  • lemon wedges for garnishing

PROCEDURE

  • cut mutton in to small pieces, wash thoroughly in running water and finally wash with turmeric powder and keep it aside
  • in a pan, add mutton, onion, garlic, ginger, turmeric powder, red chilli powder, coriander powder, salt and water
  • mix well
  • pressure cook for 3-5 whistles and keep it aside
  • to fry the mutton, heat oil in a wok
  • add cumin seeds and curry leaves
  • saute till curry leaves turn crisp
  • add finely chopped green chilli, garlic and ginger
  • saute for 30 seconds on medium-high heat
  • add finely chopped onions
  • saute onions until they turn brown and light crisp
  • now add turmeric powder, red chilli powder, coriander powder, garam masala powder and salt
  • mix well 
  • now add cooked mutton along with mutton stock
  • cover and cook on medium heat for 15-20 minutes
  • add pepper powder and curry leaves
  • mix well and continue stirring the mutton to coat with all the spices.
  • continue to cook and roast mutton in low flame for another 15 minutes
  • check no liquid is left in the wok
  • mutton has to coat well with all the spice powders.
  • garnish with lemon wedges and curry leaves

MUTTON CHUKKA VARUVAL STEP-BY-STEP PHOTO RECIPE

Take washed mutton in a vessel

add finely chopped onion, garlic and ginger

add turmeric, red chilli, coriander powder and salt

add half cup of water

mix well

place the vessel in the pressure cooker or you can cook directly in the pressure pan

pressure cook for 3-5 whistles 

cooked mutton, keep it aside

heat oil in a wok

add cumin seeds

add curry leaves, saute till they turn crisp

add finely chopped green chilli, garlic and ginger

saute on medium-high heat

add finely chopped onion

saute on medium-high heat

onion turns brown color

add turmeric, red chilli, coriander, garam masala powder and salt

coat well with onions

add cooked mutton along with mutton stock

cover and cook on medium heat for 15-20 minutes

once half of the liquid reduced

add pepper powder

add curry leaves

mix well

continue to cook and roast mutton in low flame for another 15-20 minutes, check no water left and mutton has roast well with all the spice powders

mutton chukka

serve with lemon wedges and some onions. Taste Awesome
