RECIPE FOR BEETROOT PORIYAL

INGREDIENTS

  • 2 tbsp peanut oil
  • 1/2 tsp mustard seeds
  • 1 tsp urad dal
  • 1/2 tsp hing (asafoetida)
  • 2 green chilli (slit)
  • 4-5 curry leaves
  • 1/2 onion (finely chopped)
  • 1 beetroot (chopped)
  • salt as needed
  • 2 tbsp grated coconut

PROCEDURE

  • Wash and peel the skin of beetroot
  • chop the beetroot
  • heat oil in a cast iron wok
  • add mustard seeds, allow to splutter
  • add urad dal, wait till it turns golden brown
  • add hing, curry leaves and green chillies
  • add finely chopped onion
  • saute till onion become translucent
  • add chopped beetroot
  • mix well
  • add salt and mix well again
  • cover and cook in low medium flame for 15 minutes or until beetroot become tender.
  • stir every 5 minutes to prevent from getting burnt
  • after 15 minutes add grated coconut
  • mix well
  • cover and cook in low flame for 5 minutes
  • switch off the flame
  • serve this delicious and crunchy beetroot stir fry with rice.

BEETROOT PORIYAL STEP-BY-STEP PHOTO RECIPE

Take 1 Beetroot

Peel the skin

Chop the beetroot using knife

heat oil in the cast iron wok

add mustard seed and allow to splutter

add urad dal

add hing (asafoetida)

add curry leaves

add slit green chillies

saute for 30 seconds in low flame

add finely chopped onion

mix well and saute till onion become translucent

add chopped beetroot

add salt

mix well

cover and cook in low medium flame for 15 minutes or till beetroot become tender

add grated coconut

mix and cook in low flame for 5 minutes
