In just two minutes you can have this perfect single serving blueberry mug cake at home.  This blueberry mug cake in the microwave is an instant dessert and it's eggless. 

This tasty Blueberry Mug Cake is quick and easy and its made with mostly pantry staples. This simple fluffy cake is not overly sweet and is bursting with fresh blueberries. It works for breakfast, and an afternoon snack.

I prefer fresh blueberries rather than the frozen one. If you are using frozen blueberries add without thawing, otherwise they will turn the cake purple!

RECIPE FOR EGGLESS BLUEBERRY MICROWAVE MUG CAKE

INGREDIENTS

• 2 tbsp melted butter

• 2.5 tbsp sugar

• 2 tbsp milk

• 1/2 tsp vanilla extract

• 1/2 tsp baking powder

• 1/4 cup all purpose flour 

• 8 blueberries

PROCEDURE

• in a bowl, whisk together the melted butter, sugar, milk and vanilla extract

• add baking powder and all purpose flour and whisk well till combined

• now add blueberries and mix well

• pour this mixture into microwave safe mug or ramekins and fill the cups halfway because the cake rises up quite a bit

• microwave for 1 minute and the cooking time would vary slightly depending on the wattage, so i recommend here to start with 45 seconds and increasing by 30 seconds

• yummy blueberry mug cake is ready

• serve the mug cake dusted with icing sugar and topped with more blueberries

NOTES

• for extra flavor, you can also mix some chocolate chips, sprinkles or raspberries, it taste delicious
• you can also bake this cake in the oven at 350 degree F for 15-20 minutes or until a toothpick inserted into the centre comes out clean

EGGLESS BLUEBERRY MICROWAVE MUG CAKE with STEP BY STEP PHOTO RECIPE

melt butter in a bowl

add sugar, vanilla extract and milk

mix well

add all purpose flour and baking powder

mix well without any lumps

add fresh or frozen blueberries

gently mix well

take ramekins or coffee mug cup

fill half of the cup with batter

microwave for 1 minute

blueberry cake is ready

cool down the cake completely before dusting

dust with a tsp of powdered sugar and fresh blueberries
