Nadan Chemmen roast is a spicy dish, well flavored with curry leaves, cumin seeds, pepper, ginger and garlic. It is a simple and quick roast using prawns and this can be prepared under 30 minutes. This recipe is adapted from Sangeetha Subhash Menon, a keralite and a popular food blogger (kothiyavunu.com).

Prawn is roasted in the coconut oil to make more flavorful which is loaded with lots of health benefits. It is delicious and tasty and it can be served as a starter or as a side dish. Chemmen roast goes well with all types of fried rice, ghee rice or with plain rice.

RECIPE FOR KERALA PRAWN ROAST

INGREDIENTS

To Grind
  • 6 shallots (small onions)
  • 3 garlic
  • 1 inch ginger
  • 1 spring curry leaves
  • 1/2 tsp black pepper corn
  • 1/4 tsp cumin seeds
  • 3 tbsp water
To Roast
  • 3 tbsp coconut oil
  • 1 cup prawns - de-veined
  • 1/4 tsp turmeric powder
  • 2 tsp red chilli powder
  • salt to taste
  • 1 tsp rice flour
  • 1 spring curry leaves

PROCEDURE

  • remove the shell and de-vein the prawns
  • wash the prawns well with running tap water
  • in a mixer grinder, add shallots, garlic, ginger, curry leaves, cumin seeds and black pepper corn
  • add little water and grind to a smooth paste
  • take cleaned prawns
  • add ground masala paste, turmeric powder, red chilli powder and salt
  • mix well and rest for 15 minutes
  • add rice flour  to the marinated prawns and mix well (this step is optional, rice flour gives slight crisp and texture to the prawns)
  • heat oil in a cast iron wok
  • temper with curry leaves
  • add marinated prawns and mix well
  • cook on medium flame, until water from the prawns has been absorbed
  • once all the water has been absorbed, roast on high flame until it turns crispy and dark brown on both the sides
  • switch off the flame and garnish with more curry leaves
  • mix well and serve hot with rice

NOTES
  • adjust spice level according to your taste
  • use coconut oil to enhance the authentic taste and flavor
  • if you dont like coconut oil replace with sesame oil or peanut oil

take all the ingredients to grind


add into the mixer grinder


add little water and grind to a smooth paste


take cleaned and de-veined prawns in to the bowl


add ground paste, turmeric powder, red chilli powder and salt


mix well and rest for 15 minutes


add a tsp of rice flour for more crispy texture


mix well


heat coconut oil in a cast iron wok, temper with curry leaves and then add marinated prawns


cook on medium flame until water from the prawns has been absorbed


cover and cook on high flame


roast on both the sides


roast until it turns crispy texture and brown on both the sides,
switch off the flame and garnish with more curry leaves


serve hot with rice
