French Apple cake


Light, fluffy and studded with tender chunks of apple, this French Apple Cake will be a fall favorite! 


During this fall season, I visited the apple farm for the first time in Virginia  found varieties of apples including fuji, Granny Smith, honey crisp, gala, Mc-Intosh, Cripps pink etc., So, decided to bake a cake with any of these. 


A tender, buttery crumb nestled with chunks of apples makes the classic French Apple Cake. In the traditional recipe, they will add dark rum, I personally skip that. This recipe is so simple and easy to bake with simple ingredients.

The cake is packed with apples on bottom of the cake and a crumbly texture on top. It's not overly sweet, but with granulated sugar on top is the perfect accompaniment for apples. 

We can enjoy this delicious cake with Whipped cream or vanilla ice cream or you can eat it plain. Taste was absolutely delicious and serve warm in pot luck or in the evening parties. RECIPE FOR FRENCH APPLE CAKE

INGREDIENTS

  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 stick unsalted butter - at room temperature
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 tbsp dark rum (optional) - I didn't use - in the traditional recipe it will be added
  • 2 apples (I used Fuji) - can use honey crisp or granny-smith
  • 1 tbsp sugar

PROCEDURE

  • take 2 apples, peel the skin and chop it into 1/2 inch piece
  • preheat oven at 350 degree F
  • grease a regular cake pan with butter or nonstick cooking spray, line the bottom of the pan with parchment paper and set aside
  • in a small bowl, whisk together the all purpose flour, baking powder and salt, keep it aside
  • take another bowl, add unsalted butter
  • cream the butter using hand beater
  • add granulated sugar, beat well until light and fluffy
  • add eggs and beat well  and scraping down the sides of the bowl 
  • add vanilla extract and beat well for a minute (if the batter looks grainy, that's okay)
  • add the flour mixture and combine altogether using rubber spatula
  • add the chopped apples
  • gently fold well into the batter
  • transfer the batter into the prepared cake pan and level the top
  • sprinkle a tbsp of granulated sugar on top of the batter
  • bake for 40 minutes or until the cake is golden on top and a toothpick inserted into the center comes out clean
  • allow the cake to cool at room temperature
  • carefully invert the cake onto the rack, remove the parchment paper, then gently flip the cake over and place it on the platter
  • slice and serve warm with vanilla ice cream
  • taste delicious 😋 
NOTE
  1. you can use 9 inch spring form or regular cake
  2. in traditional recipe, 3 tbsp dark rum will be used, after the adding vanilla extract
  3. taste will be great, if serve warm with whipped cream or vanilla ice cream

take all purpose flour in a mixing bowl


add baking powder


add salt


whisk well and set aside


take unsalted butter in another bowl


cream the butter using hand beater


add granulated sugar


beat well until light and fluffy


add 2 egg


beat well


add vanilla extract


beat well for a minute


scraping down the sides of the bowl


add flour mixture


combine altogether using spatula


I took 2 fuji apples, peel the skin and chop into 1/2 inch pieces


add into the batter


gently fold into the batter


grease a regular cake pan with butter and line up with parchment paper


transfer the batter into the pan and level the top


sprinkle a tbsp of granulated sugar



preheat oven at 350 degree F and Bake for 40 minutes

cool down at room temperature
