RECIPE FOR LEMON RICE

INGREDIENTS

  • 1 cup basmati rice
  • 1 tsp oil to cook rice
  • 1 tbsp oil
  • 1/4 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp bengal gram dal
  • 6 curry leaves
  • 2 red chillies
  • 1.5 tbsp roasted peanuts
  • 1 tbsp cashews
  • 1/2 tsp turmeric powder
  • 1/4 tsp hing (asafoetida)
  • less than 1/4 cup lemon juice (extracted juice from 1 medium size lemon)
  • salt as needed
  • few coriander leaves for garnish

PROCEDURE

  • take 1 cup basmati rice in a vessel
  • wash and soak in water for 10 minutes
  • add enough water and allowed to boil
  • add a tsp of sesame oil in the boiling water
  • cook rice (check rice are separate, rice will not stick together)
  • drain the water and keep the rice aside
  • heat oil in a pan
  • add mustard seeds, urad dal and bengal gram dal, saute for a while
  • add curry leaves, red chillies, peanuts and cashews, fry till cashew turn color
  • add turmeric powder and hing, saute well
  • add lemon juice and salt. mix well
  • add cooked rice
  • combine well
  • garnish with coriander leaves
  • serve with potato curry or any vegetable curry of your choice.

Lemon Rice Step-By-Step Photo Recipe

take 1 cup basmati rice

wash and soak in water for 10 minutes

check rice are cooked well

drain the water and keep the rice aside

heat oil in a pan

add mustard seeds, urad dal and bengal gram dal

saute well

add curry leaves

add red chillies

add roasted peanuts and cashews

add turmeric powder

add hing and mix well

add lemon juice

add salt

mix well

add cooked rice

combine well

add coriander leaves

mix well
