Idli Podi or Milagai Podi – a flavorful spice powder made of lentils, red chilli and garlic. This is one of the comfort side dish recipe for morning breakfast in Tamil Nadu. This recipe is easy to prepare and goes very well with Idli, dosa and uthappam. Idli podi tastes little spicy and slightly crunchy to the mouth. For making podi idli, mix the idli podi with sesame oil and apply all over the idli and sprinkle the idli podi on top of the uthappam or dosa to make the recipe more delicious. RECIPE FOR IDLI DOSA PODI

INGREDIENTS

  • 1 cup bengal gram dal
  • 1/2 cup urad dal
  • 1/4 cup coriander seeds
  • 15 red chilli
  • 8 garlic with skin
  • salt to taste
  • 1/4 tsp hing 
  • tsp of oil 

PROCEDURE

  • heat oil in a pan, roast bengal gram dal and urad dal separately (avoid burning the dal) and keep  it aside
  • dry roast coriander seeds and keep it aside
  • add 1/4 tsp oil, roast the red chilli 
  • dry roast garlic to reduce the moisture content
  • allowed to cool completely
  • transfer all the roasted ingredients into mixer grinder
  • add salt and hing
  • grind to a slight coarse powder
  • store in an air tight container
  • tastes yummy

Idli Dosa Podi with Step-By-Step Photo Recipe

heat oil in a pan, roast bengal gram dal

roasted bengal gram dal (don’t burn the dal), keep it aside

roast urad dal

roasted urad dal

roast coriander seeds

roasted coriander seeds

roast red chilli (don’t burn the chilli)

dry roast garlic to reduce the moisture content

transfer all the roasted ingredients into mixer grinder

add salt

add hing

close with lid and grind to a slight coarse powder

Idli Podi Ready, cool down completely, store in an air tight container
