FISH MOLEE RECIPE | MEEN MOILEE RECIPE KERALA STYLE FISH STEW

Fish Molee is a preparation where fish is stewed in coconut milk and very low spiced flavor.  The use of green chillies and black pepper keep the heat subtle while the coconut milk makes it creamy and rich. Fish Molee is one of the popular fish curry on the cuisine of Kerala. Appam, Idiyappam, chapathi or hot steamed rice are the best combination of this recipe. RECIPE FOR MEEN MOILEE

INGREDIENTS

For Marination:

  • 1 lb Salmon Fish or any other fish
  • 1 tsp turmeric powder
  • 1 tsp lemon juice
  • salt as needed for marination

For Gravy:

  • 2 tbsp coconut oil
  • 1/2 tsp mustard seeds
  • 1 tbsp garlic – chopped
  • 1 tbsp ginger – chopped
  • 2 green chillies – sliced
  • 1 medium size onion – thinly sliced
  • 1 spring curry leaves
  • 1 medium size tomato – sliced
  • 1 tsp black pepper powder
  • salt to taste
  • 1 cup Thin coconut milk – 3rd extract | Moonampal
  • 3/4 cup semi thick coconut milk – 2nd extract | Randampaal
  • 3/4 cup thick coconut milk – 1st extract | Onnampaal
  • 1 tsp lemon juice

PROCEDURE

  • Wash and clean the fish
  • in a mixing bowl add turmeric powder, lemon juice and salt
  • mix and marinate the fish and set aside for 30 minutes
  • heat oil in a pan, fry the marinated fish pieces on a medium heat for 2 minutes and keep it aside.
  • heat coconut oil a cast iron wok, add mustard seeds, chopped ginger and garlic, green chillies, thinly sliced onion and curry leaves
  • saute all until onion turns translucent and golden brown
  • add sliced tomatoes 
  • mix with onion
  • add pepper powder and keep the flame low
  • add thin coconut milk and salt
  • mix well
  • add the fried fish pieces carefully, cover and cook the fish until its half done
  • now add the semi thick coconut milk, mix well until the fish is totally immersed in the gravy. Let it cook slowly for sometime till the fish completely absorbs it.
  • remove the pot from flame, add the thick coconut milk, again place it on flame and cook for 1 minute and mix gently, otherwise the fish might break
  • switch off the flame
  • add lemon juice
  • Enjoy with hot steamed rice or chapathi, tastes great.

wash and clean the fish

add turmeric powder

add lemon juice

add salt

marinate the fish and keep it aside for 30 minutes

heat 2 tsp of oil in frying pan

add marinated fish and fry for 2 minute

remove from flame and keep it aside

heat coconut oil in cast iron wok

add mustard seeds

add chopped garlic

add chopped ginger

add slitted green chillies

add thinly sliced onion

add 1 spring curry leaves

saute until onion turns translucent and golden brown

add sliced tomato (don’t mash the tomato)

add pepper powder

add thin coconut milk

add salt

mix well

add fried fish pieces, cover and cook the fish until its half done

add semi thick coconut milk

mix well until the fish is totally immersed in the gravy

cover and cook in low flame until the fish is fully cooked

remove from flame and add thick coconut milk and again back to flame and cook for 1 minute 

switch off the flame and add lemon juice

mix gently

fish molee

serve with hot steamed rice or chapathi
