Javvarisi Vadai is a very popular Maharashtrian snack made with tapioca pearls (sago), boiled potatoes and peanuts. Javvarisi is rich in complex carbohydrates, it is used to make various dishes especially on days of fasting like Navaratri, Maha Shivratri, Ekadashi, etc.,

The tapioca pearls used in this vadai is nutritious and light on the stomach. Peanuts add a nice crunch to this delicious snack recipe. This tea-time recipe is easy to make and can be made in just 20 minutes. You can also pair it up with some green chutney and relish its amazing flavors.

Javvarisi (sago) is mostly used for fasting, a larger population is still unaware of what sago is and how it is made. It is full of starch and contains carbohydrates. It is collected from the spongy centre of tropical palm trees. The tapioca plant's root is used to extract the starch; then, the starch is transformed into small, pearl-like spheres. This is how sago is made. Sago provides ample energy, it is gluten free and non-allergic, also it helps to prevent digestion issues.

INGREDIENTS

  • 1 cup javvarisi (sabudana or sago or tapioca pearls)
  • 3/4 cup roasted peanuts - crushed
  • 1 tsp cumin seeds
  • 3 green chillies - finely chopped
  • 1/2 lemon
  • 1 tbsp sugar
  • salt to taste
  • 1/4 cup coriander leaves - finely chopped
  • 4 tbsp curry leaves - finely chopped
  • 3 medium sized potatoes - mashed

PROCEDURE

  • rinse javvarisi in water for 2-3 times and then soak overnight or atleast 6 hours with enough water 
  • after overnight soaking, drain the water completely using strainer and keep the javvarisi aside, when you press the pearls between your fingers, it should mash very easily
  • roast peanuts in low medium flame and then remove the skin
  • add roasted peanuts into the mixie jar and grind to a slight coarse powder and set aside
  • boil the potatoes and mash well using potato masher without chunks
  • in a big mixing bowl, add drained javvarisi (sago), cumin seeds, crushed peanuts, chopped curry leaves, coriander leaves, green chillies, lemon juice, sugar and salt
  • add mashed potatoes and mix altogether and make a nice dough
  • pinch a small batter and make smooth balls and then gently flatten it to form like vadai (you can also dust your hands with rice flour to prevent it from sticking to your hands)
  • gently lower the vadai in hot oil and fry on medium flame
  • cook the vadai on both the sides until golden brown and remove the vadai from oil and drain on paper towel
  • serve hot with any green chutney

NOTES
  • fry in medium flame for even cooking
  • adjust green chillies according to your taste
  • make sure to wash the sago 2-3 times before soaking in water to remove the starch



JAVVARISI VADAI WITH STEP BY STEP PHOTO RECIPE

add roasted peanuts in mixie jar


grind to a coarse powder


wash and soak sabudana in water for overnight


drain the excess water using strainer and set aside for 5-10 minutes


add soaked tapioca pearls in large mixing bowl


add peanut powder, cumin seeds, chopped curry leaves, coriander leaves, green chillies, salt, sugar and lemon juice


add boiled mashed potatoes


mix well


pinch a small batter and make a small ball


gently flatten the balls and make a nice patties


drop the patties in hot oil


fry on medium flame on both the sides


once the vadai turns brown, remove from oil and 
drain the excess oil on paper towel


serve hot with any green chutney
