Arbi roast

Arbi also known as Colocasia or Taro root. In Tamil it is called as Seppankizhangu. It has very significant amount of dietary fiber, carbohydrates and vitamins. It acts as an antioxidant to remove toxins from the body. 


Arbi can be cooked in 2 ways, open pot method or pressure cook method, its very important step in the whole process. Adding cumin seed and fennel seed powder gives extra flavor to this roast. This recipe has no onion and no garlic.

This recipe is very easy to prepare and super delicious, goes well with any variety rice, rasam rice or curd rice. RECIPE FOR ARBI ROAST

INGREDIENTS

  • 300g Arbi / Colocasia / Seppankizhangu
  • 4 tbsp oil - divided
  • 1/4 tsp mustard seeds
  • 1/2 tsp Urad Dal
  • 1/8 tsp hing
  • 1 spring curry leaves
  • 1/8 tsp turmeric powder
  • 3/4 tsp red chilli powder
  • 1/2 tsp coriander powder
  • 1/4 tsp cumin seed powder
  • 1/4 tsp fennel seed powder
  • salt to taste

PROCEDURE

  • Pressure cook Arbi till soft (open pot method or pressure cook method)
  • if using pressure cooker, pressure cook for 2 whistle
  • cool down completely, peel the skin of arbi and cut it into small pieces
  • heat 3 tbsp oil in a cast iron pan
  • add cooked Arbi
  • shallow fry the Arbi carefully till crispy and golden brown and then keep it aside
  • heat a tsp of oil
  • add mustard seeds and allow to crackle
  • add Urad Dal, hing and curry leaves
  • saute for few seconds
  • add shallow fried arbi
  • add turmeric powder, red chili powder, coriander powder, cumin powder, fennel seed powder and salt
  • mix gently
  • cover and cook in low medium flame
  • roast evenly on all the sides (stir occasionally)
  • roast Arbi until raw smell of spice powder goes
  • Seppankizhangu roast ready

NOTE :
  1. adjust red chilli powder as per your taste
  2. you can replace Arbi with yam or potato
  3. if you don't have fennel seed powder, crush the seeds gently and add it

take Arbi in pressure cooker


pressure cook for 2 whistle

peel the skin


cut it into small pieces


heat oil in cast iron pan


add cooked Arbi


shallow fry the Arbi till crispy and golden brown


remove from the pan and keep it aside


in the same pan, heat a tsp of oil


add mustard seeds, Urad Dal and hing


add curry leaves and allowed to turn crisp


add shallow fried Arbi


add turmeric powder, red chilli powder, coriander powder, cumin powder, fennel seed powder and salt


mix well


cover and cook in low medium flame,
 until the raw smell of spice powder goes
