RECIPE FOR KERALA MUTTON ROAST

INGREDIENTS
  • 400 g Mutton (meat with bone) 
  • 4 garlic 
  • 1 inch ginger
  • 5 shallots (pearl onion)
  • 3 green chilli
  • 1/4 tsp turmeric powder
  • half lemon - extract the juice
  • 2 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp garam masala powder
  • 1 tbsp freshly ground black pepper powder
  •  1tbsp coconut oil
  • 1 tsp fennel seed powder
  • 1 spring curry leaves
  • 1 medium size onion - thinly sliced
  • 1/2 cup water
  • salt as needed
  • 1/4 cup dried coconut powder

PROCEDURE
  • wash and clean the mutton pieces well and keep it aside
  • in a mixer grinder, add garlic, ginger, shallots and green chilli
  • grind to a smooth paste by adding little water
  • in a large mixing bowl, add mutton pieces, ground paste, turmeric powder, red chilli powder, coriander powder, garam masala powder, black pepper powder and lemon juice
  • marinate well and allow to rest at room temperature for 1 hour
  • heat coconut oil in a cast iron wok
  • add fennel seed powder and curry leaves, saute for a while
  • add thinly sliced onion, saute well until it turns light golden brown
  • add marinated mutton pieces
  • mix well
  • add 1/2 cup water
  • cover and cook in low flame till the meat cooked well
  • once the gravy thickens and all the water absorbed completely, roast in a high flame till it becomes dry and the mutton looks like dark brown color
  • if water is present, try to roast well without burning, and this recipe with get a darker shade once it rests.
  • serve hot with steamed rice and Enjoy !


Kerala Mutton Roast with Step-by-Step Photo Recipe


in a mixer grinder, add garlic, ginger, green chilli and shallots


grind to a smooth paste 

in a large mixing bowl, add washed mutton pieces


add ground paste


add turmeric powder


add red chilli powder


add coriander powder


add freshly ground black pepper powder


add garam masala powder


add half lemon juice


mix and marinate well with mutton pieces and allow to rest at room temperature for 1 hour


heat coconut oil in a cast iron wok


add fennel seed powder


add curry leaves and saute well until it turns crisp


add thinly sliced onion


fry well till it turns golden brown 


add marinated mutton


combine well


add half cup water


add salt


cover and cook in low flame till the meat become soft and cooked


water absorbed completely


add dried coconut powder and roast well in high flame


Mutton roasted well, it becomes dry and dark (make sure no water is present)
