Ridge Gourd is one of the most nutritious and easily digestive vegetable. Ridge gourd also known as Peerkangai in Tamil. This Ridge Gourd Gravy is from North Indian cuisine. It is very easy and simple to prepare. Ridge Gourd curry tastes great with chapathi, pulav or rice. RECIPE FOR RIDGE GOURD GRAVY

INGREDIENTS
  • 1 medium size Ridge Gourd
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1 tsp urad dal
  • 1/2 tsp cumin seeds
  • 8 curry leaves
  • 2 green chilli - slitted
  • 1 medium size onion - finely chopped
  • 1 tbsp ginger garlic paste
  • 1 small tomato - finely chopped
  • 1/4 tsp turmeric powder
  • 1 tsp sambar powder
  • 1/2 tsp garam masala powder
  • salt as needed
  • 1/4 cup grated coconut
  • 1 tsp kasa kasa 
  • 1.5 tbsp cashews
  • 1 tbsp fresh cream or curd

PROCEDURE
  • Take 1 medium size ridge gourd, peel the skin and chop into medium size pieces and keep it aside.
  • in a small mixer grinder, add coconut, kasa kasa and cashews, grind to a smooth paste by adding little water.
  • heat oil in a cast iron pan, add mustard seeds, urad dal, cumin seeds and curry leaves, saute well.
  • add finely chopped onion and slitted green chillies
  • saute well until onion turns translucent
  • add ginger garlic paste and chopped tomatoes
  • saute well till tomatoes turn mushy
  • add turmeric powder, sambar powder, garam masala powder and salt
  • mix well
  • add chopped ridge gourd
  • combine well
  • cover and cook in low flame until ridge gourd turns soft (stir every 30 seconds)
  • add grounded coconut paste and 1/4 cup water
  • mix well
  • cover and cook in low flame for few minutes or until it thickens
  • add fresh cream 
  • mix well and cook for 1 minute
  • garnish with coriander leaves
  • serve hot with chapathi
  • tastes delicious.


Ridge Gourd Gravy Step-by-Step Photo Recipe


take 1 medium size ridge gourd


peel the skin,  store the skin to prepare chutney


chop into medium pieces


in a mixer grinder, add grated coconut, cashews and kasa kasa


grind to a smooth paste by adding little water


heat oil in pan, add mustard seeds, urad dal and cumin seeds


add curry leaves, saute till it turns crisp


add slitted green chilli and finely chopped onion


saute well until they turn translucent


add ginger garlic paste and chopped tomatoes


saute well till it turns mushy


add turmeric powder, sambar powder, garam masala powder and salt


mix well


add chopped ridge gourd


mix well


cover and cook in low flame till it turns soft (stir every 30 sec, so that it doesn't stick to bottom of the pan)


add grinded coconut paste


add 1/4 cup water


mix well


cover and cook in low flame for 5 minutes or until the gravy thickens


add fresh cream and cook for 1 minute in low flame


garnish with coriander leaves
