Chettinad Vellai Kurma or White Kurma is a Tamilnadu style vegetable gravy. White kurma is delicious and mildly spiced kurma in which vegetables are cooked in flavorful and creamy coconut based masala. This white vegetable kurma goes well with parotta, chapatti, appam, idiyappam, dosa and idli. 

This recipe is purely based from Chettinad Cuisine with authentic spices. This recipe is extremely easy to prepare and quick to make. The only time consuming process is chopping the vegetables. I added very finely chopped green chillies after ginger garlic paste, if you are giving this kurma to kids, grind green chillies along with ginger and garlic, adjust spice level according to your taste. Adding poppy seeds and cashews gives thickens to the kurma, so adjust the water level. Add garam masala powder after switch off the flame, which gives nice flavor to this dish.

INGREDIENTS



For Kurma

  • 2 tbsp oil
  • 3 cloves
  • 1 inch cinnamon stick
  • 1 cardamom
  • 1 bay leaf
  • 1 spring curry leaves
  • 1 big onion – finely chopped
  • 1 tbsp ginger garlic paste
  • 8-10 green chillies – finely chopped
  • 1 tbsp coriander leaves
  • 1/2 cup carrot – chopped
  • 1/2 cup beans – chopped
  • 1/2 cup peas
  • 1/2 cup potato – chopped
  • 3 cup water – divided
  • salt to taste
  • 1 tbsp lemon juice
  • 1/4 cup coriander leaves

To Grind

  • 1/2 cup grated coconut
  • 8 cashews
  • 1/2 tsp poppy seeds
  • 1 tsp fennel seeds
  • water to grind

PROCEDURE

  • heat 2 tbsp oil in pressure cooker
  • add cloves, cinnamon stick, cardamom and bay leaf
  • saute well for few seconds
  • add handful of curry leaves and allowed to turn crisp
  • add finely chopped onion
  • saute well until it turn translucent
  • add ginger garlic paste
  • saute well until the raw smell goes
  • add finely chopped green chilli, saute well until the raw smell goes
  • add chopped vegetables, carrot, beans, peas and potato
  • mix well and saute for 2 minutes
  • add 1.5 cup water
  • add salt
  • mix well
  • pressure cook for 2 whistle and switch off the flame
  • in the mean time, add grated coconut, cashew, poppy seed and fennel seeds in mixer grinder
  • grind to a smooth paste by adding little water
  • once pressure releases, open the lid and mix the vegetables
  • add grounded coconut paste
  • add 2 cup water
  • mix well
  • bring white kurma to boil
  • once it starts boiling, add lemon juice and garam masala powder
  • switch off the flame
  • garnish with coriander leaves
  • White Kurma Ready

NOTES

  1. adjust spice level according to your taste
  2. you can grind green chilli with ginger and garlic
  3. after adding coconut paste, don’t cook for longer time
  4. adding poppy seeds, cashews gives thickness to the kurma
  5. adding vegetable is your choice
  6. adding curry leaves is must

WHITE KURMA WITH STEP-BY-STEP PHOTO RECIPE

heat oil in a pressure cooker

add cloves, cinnamon stick, bay leaf and cardamom pod, saute for few seconds

add curry leaves, allow to turn crisp

add finely chopped onion, saute well

add ginger garlic paste, saute well until the raw smell goes off

add finely chopped green chili

saute well

add chopped vegetables

mix well

add coriander powder

mix well

add enough water

add salt

mix well

pressure cook for 1-2 whistle

vegetables cooked

add coconut in a mixer grinder

add poppy seeds, cashews and fennel seeds

add little water and grind to a smooth paste

add grounded paste into pressure cooker

mix well and add 1 cup water

bring kurma to boil

add lemon juice

add Garam Masala powder

add chopped coriander leaves

combine well
