Idiyappam is a traditional breakfast recipe in Kerala and Tamilnadu. Idiyappam is also called as string hopper / noolappam / noolputtu. This recipe is made of ragi flour and it is one of the very healthy breakfast recipe as it is steam cooked. It is also served during dinner time. 

Idiyappam is usually served with a variety of side dishes like vegetable kurma, chicken curry, kadala curry etc., In Tamil Nadu, the popular way to serve idiyappam with ghee, grated coconut and sugar or with sweetened coconut milk. This combination is popular among children. This recipe is pretty simple to prepare and the key is to get the right consistency of the dough. 

Ragi Idiyappam  is light, steamed and comfort food which is very healthy breakfast contains enormous amount of fibre, iron and calcium. This is purely a vegan and gluten free recipe, hence it can be consumed by everyone. Millets are super natural foods for weight loss also.

  • INGREDIENTS

    • 1.5 cup ragi flour
    • salt to taste
    • water - as needed
    • 1 tbsp oil - divided

    PROCEDURE

    • dry roast the ragi flour on medium flame until the flour is very hot and aromatic, this process will take about 7-8 minutes (avoid burning the flour)
    • remove the flour from the pan and transfer into the bowl
    • bring water to boil in a sauce pot along with a tsp of salt
    • add boiling water in to the roasted ragi flour and mix it with the ladle until it all comes together (there will be little bits of ragi flour that may see, thats Ok)
    • cover with lid and rest the dough for 5 minutes
    • once the dough turns warm, grease your hands with oil and  knead well with your hand to make a smooth dough
    • grease the idiyappam press with oil
    • take a small portion of dough and make it as log and fill the idiyappam press with the dough
    • squeeze the idiyappam press on greased idiyappam plate or idli plate in a circular motion
    • place it on the steamer and cook the idiyappam for 8-10 minutes
    • ragi idiyappam is ready to serve
    • serve with kadala curry, sweetened coconut milk, vegetable stew or grated coconut with sugar
    • Enjoy !
    NOTES

    • depends on the ragi flour, you may need less or more water
    • add water little by little into the flour or else the dough will be sticky
    • you have to press the idiyappam press when the dough is warm or hot
    • adjust salt as per your taste

    add ragi flour into the pan


    dry roast the flour in medium flame until it turns aromatic


    switch off the flame


    transfer into the bowl


    bring water to boil with a tsp of salt


    add water little by little


    mix it with the ladle and make a dough


    take a small portion of dough and make as a log and 
    add into the idiyappam maker


    grease idli plate with oil


    all set to squeeze


    squeeze the idiyappam maker in circular motion on greased idli plate or idiyappam plate



    place it on the steamer


    cover with lid and steam for 8-10 minutes


    hot ragi idiyappam is ready
