Mushrooms are protein packed and best alternative to meat. This mushroom pepper fry is Chettinad based, spicy and quick stir fry. The addition of onions and capsicum with mushrooms with freshly ground pepper enhances the taste to extraordinary level. You can skip the capsicum and onion if you don't want, its totally optional.

Mushroom pepper fry goes well with chapathi or roti or with side dish for rice. You can serve this as a starter and a perfect lunch box recipe. RECIPE FOR MUSHROOM PEPPER FRY

INGREDIENTS

  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 spring curry leaves
  • 1 large onion - thinly sliced
  • 1 tbsp ginger garlic paste
  • 1/4 cup green capsicum - thinly sliced
  • 2 cup mushroom - sliced
  • 1/4 tsp turmeric powder
  • 3/4 tsp red chilli powder
  • 1.5 tsp coriander powder
  • salt to taste
  • 2 tsp black pepper powder
  • 2 tbsp coriander leaves - chopped

PROCEDURE

  • Heat oil in a pan
  • temper with mustard seeds and cumin seeds
  • add curry leaves, allow to turn crisp
  • add thinly sliced onion, saute well, until it turn translucent
  • add ginger garlic paste
  • saute well until the raw smell goes
  • add thinly sliced capsicum and mushroom
  • mix well and saute the mushrooms for 3-4 minutes
  • when mushroom starts to release water, add in turmeric powder, red chili powder, coriander powder, pepper powder and salt
  • mix well
  • cover and cook the spice powders in low flame for few minutes or until its done (oil starts to release)
  • switch off the flame
  • garnish with coriander leaves
  • serve as side dish for rice or with Chapathi
Notes
  1. adding freshly ground black pepper powder enhances the taste
  2. adding capsicum is optional
  3. good choice of mushroom is important
