VEGETABLE KURMA | VEG KURMA | SIDE DISH FOR CHAPATHI | MIXED VEGETABLE KURMA

Kurma is a curry made using veggies or meat along with coconut and spices. South Indian style kurma is very popular and is loved by most people for its unique aroma and taste. Here i used grated coconut, poppy seeds, cashews and fried gram dal to enhance more flavor to this dish. Veg Kurma is usually served with Idli, Dosa, Chapathi, poori etc., This recipe is easy to prepare and tastes delicious. Follow my step-by-step photo  recipe to prepare mixed vegetable kurma. RECIPE FOR MIXED VEGETABLE KURMA

INGREDIENTS

  • 3 tbsp oil
  • 5 cloves
  • 2 inch cinnamon stick
  • 2 bay leaf
  • 1/4 tsp cardamom powder
  • 1 large onion – finely chopped
  • 1 tomato – finely chopped
  • 2 tsp ginger garlic paste
  • 1/4 cup carrot – chopped
  • 1/4 cup beans – chopped
  • 1/4 cup peas
  • 2 small potato – chopped
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 2 tsp coriander powder
  • (add sambar powder and skip red chilli and coriander powder)
  • 1 tsp garam masala powder
  • 1 green chilli – slitted
  • salt as needed
  • 1/2 cup grated coconut
  • 1 tbsp roasted gram dal
  • 1 tbsp cashews
  • 1 tsp poppy seeds 
  • water as needed
  • coriander leaves for garnish

PROCEDURE

  • in a mixer grinder, add grated coconut, cashews, poppy seeds and fried gram dal
  • grind to a smooth paste by adding little water and keep it aside
  • heat oil in a pressure cooker pan
  • add cloves, cinnamon stick, bay leaf and cardamom powde
  • saute for few seconds
  • add finely chopped onion and saute until onion turn transparent
  • add ginger garlic paste and chopped tomato
  • saute well, till the raw smell goes and tomatoes become soft
  • add turmeric powder, chilli and coriander powder, garam masala powder and salt
  • mix well
  • add chopped carrot, beans, potato and peas
  • combine well with the spices
  • add grounded coconut paste
  • add required amount of water (kurma should not be too thick nor too watery)
  • mix well   
  • pressure cook for 3 whistle
  • once pressure subsides naturally, carefully open the cooker
  • garnish with chopped coriander leaves
  • vegetable kurma goes well with idli, dosa, chapathi, parotta and poori
  • tastes delicious

Mixed Vegetable Kurma with Step-By-Step Photo Recipe

in a mixer grinder, add grated coconut, poppy seeds, fried gram dal and cashews

grind to a smooth paste by adding little water and keep it aside

heat oil in a pressure cooker pan

add cloves, cinnamon stick, bay leaf and cardamom powder 

saute well

add finely chopped onion

 saute well

add ginger garlic paste

add chopped tomato

saute well till the raw smell goes completely

add turmeric powder, sambar powder, green chilli, garam masala powder and salt

mix well and cook for 1 minute

add chopped vegetables (carrot, beans, peas and potato)

combine well with the spices

 add grounded coconut paste

mix well and add more water (around 1.5 cup)

close the lid and pressure cook for 3 whistle

Vegetable Kurma Ready

garnish with chopped coriander leaves

serve hot with Idli, Dosa, Chapathi and Poori
