RECIPE FOR BROCCOLI PARATHA

INGREDIENTS
  • 1 1/2 cup whole wheat flour
  • 3 tsp oil
  • 1/2 tsp salt
  • water as needed to make dough
  • 1 cup broccoli 🥦 florets 
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion - finely chopped
  • 2 green chilli - finely chopped
  • 1 tsp ginger garlic paste
  • salt as needed for stuffing
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala powder
  • oil/ghee to make parathas
PROCEDURE
  • in a mixing bowl, add whole wheat flour, oil and salt
  • mix well
  • add water little by little and make a soft and smooth dough
  • cover with lid or kitchen towel and keep it aside
  • bring water to boil in a sauce pan
  • add broccoli florets in the boiling water
  • cook for 2 minute
  • drain the water and keep the broccoli florets aside and allowed to cool completely
  • grind the broccoli florets in to a coarse paste
  • heat oil in a pan
  • add cumin seeds and allow to splutter
  • add finely chopped onion and green chilli
  • saute onion until it turn translucent
  • add ginger garlic paste and saute well till the raw smell goes
  • add coarsely grounded broccoli paste and mix well
  • add turmeric powder, red chilli powder, cumin powder, garam masala powder and salt
  • mix well and cook until the mixture becomes dry
  • broccoli stuffing is ready and allowed to cool completely
  • pinch 2 small ball size from the dough and make smooth balls
  • place one ball in the board, flatten the ball and dust with some dry flour
  • roll it out into a small circle using a rolling pin and repeat the same for the other ball
  • place 2 tbsp of broccoli stuffing in the center of the rolled dough, and spread it evenly and cover with other rolled dough
  • press the edges, dust with some dry flour and carefully roll it out into a big circle
  • place the prepared rolled paratha in the hot tawa, cook on both the sides by spreading a tsp of oil.
  • repeat the same process above for the rest of the dough.
  • serve with plain curd/yogurt or pickle
  • tastes delicious.

Broccoli Paratha with Detailed Step-By-Step Photo Recipe


in a mixing bowl, add whole wheat flour, salt and oil



add water little by little 


make a soft and smooth dough, cover and keep it aside


broccoli


cut into small florets


bring water to boil in the sauce pan


add broccoli florets and cook for 2 minute


drain the water and keep the broccoli florets aside and allowed to cool completely


in a mixer grinder, add florets 



grind to a coarse paste


heat oil in a pan


add cumin seeds and allowed to splutter


add chopped onion and green chilli, saute well


add ginger garlic paste


saute well till the raw smell goes


add ground broccoli paste


add salt


mix well


add turmeric powder, red chilli powder, cumin powder and garam masala powder


combine well with the masala and cook for 2 minute, mixture becomes dry and allowed to cool completely, stuffing ready


pinch a small ball size from the dough


sprinkle some flour


roll it into a small circle using rolling pin


add broccoli stuffing in the center and spread it evenly


cover with other rolled dough 


press the edges, sprinkle more flour and spread it into a big circle


place the prepared paratha in the hot tawa


spread some oil and cook on both the sides
