Sri Lankan Chicken Curry is very similar to a traditional Indian curry except with one ingredient in this curry is Tamarind. It gives light sweet and tangy flavor to the curry and we cannot replicate with lime juice or vinegar. The spice powder used in this curry is madras curry powder which is similar to sri lankan curry powder and am not able to find sri lankan curry powder, is basically a roasted and ground whole spices like coriander, cinnamon, cloves, cardamom, fennel, cumin etc., Finally adding coconut milk to this curry which enhances the strong flavor and richness to the curry. This delicious chicken curry is very simple and easy to prepare. It goes well with rice, dosa, idli, idiyappam and chapathi. RECIPE FOR SRI LANKAN 

CHICKEN CURRY

INGREDIENTS

  • 500 g chicken, cut into medium size
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1.5 tsp Sri Lankan curry powder or madras curry powder
  • 1 tsp black pepper powder
  • 4 tsp tamarind water
  • 1 tsp salt
  • 4 cloves
  • 2 inch cinnamon
  • 1 cardamom
  • 2 tbsp sesame oil
  • 1 onion – finely chopped
  • 1 tsp ginger – finely chopped
  • 2 tsp garlic  – finely chopped
  • 1 spring curry leaves
  • 1 tsp red chilli powder
  • 1.5 tsp madras curry powder
  • 1 small tomato  – chopped
  • 3/4 cup coconut milk
  • 1 spring curry leaves
  • 1 tbsp finely chopped coriander leaves for garnish

PROCEDURE

  • in a mixing bowl, add chicken, turmeric powder, red chilli powder, madras curry powder, pepper powder and salt
  • marinate well
  • add tamarind water and keep in refrigerator for 30 minutes
  • crush cloves, cinnamon and cardamom in a pestle and mortar
  • heat oil in a pan, add crushed whole spices and saute well
  • add finely chopped onion, garlic, ginger and curry leaves
  • saute well until onions start to turn golden in color
  • add red chilli powder and madras curry powder
  • saute for a minute
  • add the marinated chicken pieces and mix well
  • once the chicken pieces are coated with the masala, add chopped tomatoes, saute until tomatoes turns mushy
  • cover and cook in low medium flame in its own juices. the chicken will let out enough water to get cooked
  • once chicken cooked well, add coconut milk and 8 curry leaves
  • mix well
  • continue to cook for 5 more minutes in low flame or until the chicken is tender
  • garnish with coriander leaves
  • cover and rest this curry for one hour, so that it develop the flavors even more
  • serve with chapathi, naan, parotta and rice
  • taste delicious.

take cleaned chicken in the mixing bowl

add turmeric powder, red chilli powder, madras curry powder, pepper powder and salt

marinate well

add tamarind water and keep in refrigerator for 30 minutes

add cloves, cinnamon and cardamom in pestle and mortar

crush the whole spices

heat oil in cast iron pan

add crushed whole spices

add finely chopped onion, garlic and ginger

add curry leaves and saute well until onion turn light brown color

add red chilli powder and madras curry powder

mix well

add marinated chicken along with tamarind water

mix well

add chopped tomatoes

mix and cook until it turns mushy

cover and cook in low medium flame in its own juices or until chicken cooked completely

add coconut milk

add curry leaves and mix well

cover and cook in low medium flame for 5 minutes or until the chicken become tender

garnish with coriander leaves
